It depends on what I am using the oil for. I use pure olive oil or canola oil if I will be using high heat cooking methods. I save the extra virgin olive oil to use in salad dressings & other uses where I want its flavor.

Olive oil is a great oil. I use it quite a lot. Now, as the "Mediterranean diet" has been proven very healthy, there is a lot of material on the health aspects of olive oil.
But I wouldn't use olive oil in baking buns, for instance. The taste is too distinctive. When I do not want a taste to come through, I use canola (rapeseed) oil. Today's canola oil has been greatly altered from the industrial oil of decades back. Now the rape/canola that is cultivated for human consumption has a very good lipid composition.

The best olive oil for cooking is from Portugal.
Make sure it's Extra Virgin Olive Oil. Brand
doesn't matter much but the higher priced
ones last longer.

You should always use extra virgin, first cold press olive oil. That is the healthiest, and IMO, the most flavorful.
I've heard (from a professional herbologist) that canola oil is better for you. I have not experienced this, as I find I have to use a lot more of it. I like the taste of olive oil better anyway.

Olive oil takes away from the tast of things, I've tested this with many things and prefer to not add it to anything- except for making salad dressing.

I always use olive oil too as its healthier and tastes nicer than veg oil. I love using chilli oil though too, really useful in pasta dishes
