UPSIDE DOWN PIE

3 tbsp. butter
1/4 c. sugar
1 c. flour
Pinch salt
1 tsp. baking powder
3/4 c. milk
1 lg. can fruit (any kind)
1 c. sugar

Mix together thoroughly butter, 1/2 cup sugar, flour, salt and baking powder, add enough milk to make a batter. Beat one minute, pour into a buttered casserole. Make topping by using canned fruits, fresh or frozen juice. Mix with sugar and bring to boiling point. Pour over batter and bake in a 400 degree oven for 30 minutes. Serve hot or cold.

2 eggs
1 1/3 cup sugar
1 tablespoon lemon juice
2 cups canned pineapple
2 9" pie crusts
1 tablespoon butter

Beat eggs slightly, add sugar, lemon juice, and pineapple. Lie pie pan with pastry, pour in filling, dot with butter and cover with top crust. Bake in 450* oven 10 in.; reduce temperature to 350* and bake 35 min. longer or until pineapple is tender.
