A dense fish cut into steaks. Salmon, Halibut and Swordfish are good. You can also have great luck with filets grilled on a peice of foil. My best experience was Bluefish that I caught that day. There is nothing like fish caught, grilled and eaten within 8 hours. I know a chef who spends his vacation on a beach. He brings his fishing poles, a couple of pots and pans, a couple of jars of herbs and spices, a tent, a couple of bottles of rum, and a good book.

Mahi-Mahi all the way. Shark is good grilling too but my favorite fish to grill is Salmon.

Tilapia. Use A teriaki marinade and put it on foil and grill it on a charcoal grill! You can't go wrong!
