Bitterness comes from the polyphenols in red wine. Typically, the more expensive a red, the more tannic it is (this is a gross oversimplification, but it works).
A white wine (not a chardonnay) or a blanc de blanc champagne should fit the bill.

Try Mountain Rhine Wine made by Almaden. It is crisp and sweet without that bitter taste.

Unlike brut champagne(sparkling) pinot noir chardonnay is not dry but sweet. If you want something v. sweet i suggest brown brothers dolcetto and syrah for the uninitiated. If for nye i suggest you try to like the dry (bitter i know not) variety as these are the best as the grape is sweet and the dryness ads balance. To try is to live!

for sparkling try Mumm Napa Cuvee M with the blue label. Or if price is not an object J. Schram Brut sparkling from Schramsberg.

look for a sweet wine or a dessert wine is good but make sure you go to a liquor store or better a winery cause they will help a sweet sherry is very good,a sweet aubergine(not sur how to spell it) is another good one they are not bitter
