CREAM CHEESE TARTS:
1 (8 oz) package cream cheese, softened
1 egg
1/2 cup sugar
1 teaspoon vanilla extract
5 oz graham crackers, crushed
2 teaspoons sugar
2 teaspoons butter, melted
1 can Cherry Pie Filling
Beat together cream cheese, egg, sugar and vanilla extract until smooth. Set aside. In another bowl combine graham crackers crumbs, sugar and melted butter. Line tart pan with small paper liners. Put a teaspoon graham cracker mixture in liner and press against liner to make a crust. (have crumbs go up side of liner) Spoon tablespoon cheese mixture over crumbs. Bake at 350 degrees for 15 minutes. Cool on rack. Top with cherry pie filling or desired fruit. Keep Refrigerated.

You could make cheesecake cupcakes! Top with chocolate chips or cherry pie filling, if you'd like.

INGREDIENTS
16 vanilla wafer cookies
2 (8 ounce) packages cream cheese, softened
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract

DIRECTIONS
1) Preheat oven to 350 degrees F (175 degrees C). Line muffin pans with cupcake papers.
2) Place one wafer cookie in the bottom of each cupcake paper. In a medium bowl, cream together cream cheese and sugar. Beat in eggs and vanilla until smooth. Pour over wafers in cupcake papers.
3) Bake in preheated oven 15 minutes, until golden and set.

I am sooo jealous. I live in Puerto Rico and there are no Sonic restaurants here but their TV ads are shown here on cable TV. Those cheesecake thingies make me drool.

I saw them on tv & they look delish. Looks like cream cheese balls are frozen, then rolled in graham cracker crumbs -- and maybe frozen again. The cherry dipping sauce might be cherry pie filling.
