INGREDIENTS
2 large ripe tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
1/2 cup dry bread crumbs
2/3 cup shredded Cheddar cheese
1/4 pound smoked sausage, cut into 1 inch pieces
DIRECTIONS
1) Preheat oven to 400 degrees F (200 degrees C).
2) Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.
3) Bake in preheated oven for 15 minutes.

Tuna-Stuffed Tomatoes
1 large tomato
1 can (6 ounces) tuna, drained and flaked
4 teaspoons mayonnaise
1 tablespoon chopped celery
1/2 teaspoon Dijon mustard
1/4 teaspoon seasoned salt
Cut tomato in half through the stem. Scoop out pulp, leaving a 1/2-in shell. In a bowl, combine the remaining ingredients. Fill tomato shells with tuna mixture; place on a baking sheet. Broil 3-4 in. from the heat for 4-5 minutes or until heated through. Yield: 2 servings.

2 tomatoes
2 tbsp olive oil
½ potato, peeled and diced
½ red onion, diced
55g/2oz wild mushrooms
1 tbsp white wine vinegar
110ml/4fl oz double cream
drizzle of olive oil
drizzle of balsamic vinegar
Pre-heat the oven to 220C/425F/Gas 7. Remove the top of the tomatoes using a small, sharp knife and reserve the lids. Spoon out the pulp inside and discard, leaving a shell. Heat the oil in a medium pan. Add the potato and onion and heat gently for 2-3 minutes to soften. Stir in the mushrooms, vinegar, cream and a splash of water and simmer gently for 10-12 minutes to reduce.. Remove from the heat and spoon the mixture into the tomatoes. Place the lids on top and transfer to a non-stick-baking tray. Bake in the oven for 4-5 minutes, or until the tomatoes are soft. Transfer the stuffed tomatoes to a serving plate and drizzle with olive oil and balsamic vinegar

I love stuffed tomatoes. In the autumn, I fill them with a combination of ground beef browned with onion, I add some rice already cooked, salt and pepper fill them and bake until the tomato is warmed all the way through. While they are baking, I make a cheese sauce to pour over top just before serving.
In the summer, I fill them with cottage cheese and tuna with green onion or sometimes with rice, mayo, mustard and a quality bologna link you find at the deli and chop it in. So good!
Cherry tomatoes I fill with cream cheese, dill and salad shrimp. Makes a wonderful Christmas appetizer.

"Baked Stuffed Cherry Tomatoes" - 4 servings
12 cherry tomatoes
1/2 cup soft bread crumbs
1/4 cup Parmesan cheese
1/4 cup chopped parsley
Salt and freshly ground pepper to taste
1 small onion; chopped
1 tbsp. butter
Preheat oven to 400*. Cut stems from tomatoes. Using a demitasse spoon, scoop out seeds and pulp; discard. Drain upside down on paper towels. Place crumbs, cheese, parsley, salt and pepper in small bowl.
Cook onion in butter until limp; do not brown. Add to crumb mixture and toss lightly. Mound mixture in tomato shells. Place tomatoes on baking sheet and bake 15 minutes.

Crabmeat au Gratin in Tomato Shells
2 large tomatoes, halved and seeded
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
2 cups cooked elbow macaroni
1 can (6 ounces) lump crabmeat, drained and flaked
1/4 cup shredded cheddar cheese
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1/4 cup bread crumbs
Using a small spoon, scoop out centers of each tomato half.
Place tomato halves in a medium shallow baking dish.
Preheat oven to 350F. In a medium saucepan, melt butter over medium heat. Add flour. Cook, stirring constantly, for 2 minutes. Stir in milk. Cook, stirring frequently, until mixture thickens, about 5 minutes. Remove from heat. Stir in macaroni, crabmeat, cheddar, cayenne pepper, and salt.
Spoon crabmeat mixture evenly into prepared tomato halves. Sprinkle tops evenly with bread crumbs. Bake until tomatoes are tender and tops are golden, about 25 minutes. Serve immediately.

Minced lamb
Mozzarella cheese
Olive oil
Salt & Pepper.
Cut the tops of the tomatoes and set aside. Remove pips and insides with teaspoon and set aside. Cook minced lamb and add the insides of the tomato to the mix. Spoon in little of the meat mix inside each one, place a cube of mozzarella cheese in and more meat mixture. Replace tops and place all tomatoes on a baking tray. Drizzle with olive oil and salt and pepper and cover with tin foil. Bake in preheated oven for 15 minutes.

try this it should work for tomatos but I use it for onions!
mashed boiled egg & potato, chopped salad
or coleslaw, diced onion. mix in salad dressing.
Add a hint of Jalepeno. fill each onion or tomato. I like to decorate them with twig of parsley & an olive! Cook briefly in Microwave Oven! I suggest serving stuff tomato with pretzels around it or tachos.
Spelling remark:
Note Tomatos is Canadian spelling and Tomatoes is the American Spelling! I think the Canadian way looks better guess cause I'm Canadian! My speller guide: Oxford Dictionary!

cut the tops off of your tomatoes and discard. make a mixture of fresh bread crumb, garlic, parsley, romano cheese, thawed frozen spinach(all the water squeezed out) and feta cheese. fill tomato and put under brouler for 10 minutes watching carefully not to burn them. Remove one cheese has melted and contents of tomato are hot.
