The dry hard fat from beef kidneys. It should always be finely chopped before adding to any recipe, otherwise it is indigestible. Beef suet is often use in steamed or baked puddings.

Suets is raw beef or mutton fat, especially the hard fat found around the loins and kidneys. It melts at about 21°C (70°F). It is a saturated fat.
The type sold in supermarkets is dehydrated suet.
