hmmm.......lets make icing for your cake.
For icing
1) 1 cup confectioners sugar
2) 3/4 cup sour cream
3) 1 tab spoon grated peel(zest) of lemon

Method:
to make icing mix sour cream and sugar with mixer until its look fluffy and creamy, it has to be thick and creamy and you can add more C. Sugar if you have to.add grated ZEST and mix one minute more.and keep it in fridge for 30 minutes.meanwhile lets get ready cake for icing.

To SOAK cake.
!) 1/2 cup REAL SUGAR
2) 1 cup Key lime juice
Method;
mix both dissolve the sugar, and keep it a side.
FINAL STEP......lets decorate the cake:
Slice the cake in 2 equal portions.
Soak the cake with brush both slices.
Now put some icing on both layers and sandwich the cake ,
put the rest icing on top and side of cake, if u have icing gun put some icing in gun and decorate it ,or just with fork or knife you can make pattern. take one thin slice of LEMON ... TWIST it and simply just put it in middle in centre.
EXTRA TIP...slice lemon in half , with sharp knife cut very thin slice (to DECORATE the cake)now take out the ZEST(PEEL) and now SQUEEZ it and add the juice to KEY LIME JUICE.to soak cake.

Quick and Simple Glaze.
1) 2 cups confectioners Sugar
2) 2 or 4 Tab spoon lemons juice and grated peel

Method:
just mix these all and beat it with mixer if you need u can use more lemon juice or keylime juice(that you have) it has to be thick and shiney.
then put icing on centre of cake and let it run on sides ,put one twisted lemon slice in middle to decorate it.

GOOD LUCK

You don't want the real sugar. Use the powdered sugar, lemon, some butter (softened), mix it all (no lumps so sift the sugar), add milk till it's pourable and glossy. GLAZE the cake, do not attempt to ice. (crushed pineapple and lemon don't always go together in a cake. But if you must, put small wedges or rings on top to decorate, ( if you like). (if it's 2-8" rounds glaze each round and let it drip down the sides, decorate after icing sets(1/4 sheet- 9x13 icing all over top, drip down sides.) If you have left over sprinkles from Christmas cookies, I'd do that instead of the pineapple or cheap dye from the store, drip it down the icing or put some in and let it be a little more yellow than the cake...

Simple Powdered sugar icing recipe

1 cup powdered sugar

4 to 5 tsp. milk, divided

MIX powdered sugar and 4 tsp. of the milk until well blended.

STIR in remaining 1 tsp. milk, if necessary for desired consistency.

With a lemon cake, that's already sweet enough, so you really dont want to overdo it with anything fancy. ;-)
