When I have a roast, I often bake the whole, cleaned carrots (nipping off just each end), peeled onions and scrubbed and peeled whole potatoes in with the roast liquid (all in the same lidded pan). Bake them for the last hour on 350 degrees, that the roast has to cook. They will come out delicious and tender. Try it I know you'll like it.

I don't peel my carrots with a knife. An easier and faster way is to use a plastic scouring pad. You put the the pad around the carrot and twist it. It takes the dirt and very little of the outside off. The vitamins are concentrated on the outside so it's healthier too.

I bake them whole, but I boil them them in chicken stock first.

Before baking them, I prepare some Besciamelle sauce first. Arrange the boiled carrots in a baking tray, then pour the sauce over them. Baked for them for 5 minutes @ 160C or until the sauce has some brown spots.

My wife uses baby carrots and does not cut them. They are about 2 inches long and "they do just fine."

LOL, they will cook just fine the way you have them. They make take a bit longer to bake thats all. You cut them to personal preference.
