and yes, you can sub chicken broth for stock, it wont be as good, and I would watch how much salt you add because broth has a lot of added salt.

You can definitely substitute canned chicken broth for the homemade stock.
Cutting on the side of the breast, cut almost all the way - until you're able to "open" the two portions and lay them flat.

slice the chicken breast most of the way through and open it like a book.
you may need to slice a tiny bit more to get it to lie down flat.
if you want it really tender, pound it out with a meat hammer.....or with your fist.
and yes, you can make that substitution.

with a knife split the brest by thicknes so the two pices are still atached in the middle ,and yes you can sub. broth for stock
