Any kind that you like, as long as it is at least a day old. Try letting it sit out of the bag overnight to dry it out some.

celhabti had a great answer and recipe for you, a mixture of breads is key. The only thing I would add to his suggestion is to cut the bread into 3/4" to 1" cubes (dependant on the type of bread and whether it will hold together). I've been making stuffing for family dinners for 25 years and his recipe is a can't miss with most dinner guests.

It should be a mix between white, wheat, and cornbread for the best stuffing.
6 tablespoons butter
2 1/2 cups onions, finely chopped
6 tablespoons butter
3 cups cornbread, coarsely crumbled
3 cups whole-wheat bread, coarsely crumbled
3 cups sourdough bread or French bread, coarsely crumbled
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
salt, to taste
black pepper
1/2 cup fresh parsley, chopped
2 eggs, lightly beaten
chicken stock or turkey broth, to moisten
Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside.
Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add turkey broth or chicken broth to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.

The drier the better. Using something too soft will cause the stuffing to be like paste. Swallow your pride and just buy the back of stuffing cubes and go from there.

Regular bread works. Just make sure it is a few days old and stale(not moldy, though) and cut it into cubes or strips.

Cornbread. Any other bread is too mushy. Jiffy is easy to prepare, because you have easy directions to follow.
