I volunteered to help cook some stuff for the freezer of a couple whose kid died recently. And seem to be short on breakfast. I don't usually freeze stuff for myself; so -- no idea what does and doesn't work.

Re-heating tips would be helpful, too.

quiche freeze well i believe....allrecipes.com has recipes for quiches as well and asnwers to questions on what freezes well and reheated directions. very wonderful thing youre doing for that family.

An Italian frittata will freeze/thaw very well. It is like a quiche without the crust. A simple search should turn up plenty of recipes. You make it in a large non-stick frying pan and then use the broiler to cook the top. Once it it made you can cut it into wedges and then lay them our on wax paper on a cookie sheet. Put them in the freezer and then take the wedges and put them into a container or wrap them in foil/saran wrap. That way the family can pull the wedges out individually and thaw/re-heat. It's a delicious breakfast or any meal really and will do just fine from the freezer.

You'll be pretty limited to quiche. Cooked eggs get a little watery and off-textured when frozen. But all the other stuff in a quiche hides that pretty well. You can warm up a frozen quiche in a 300 degree oven, about 20 minutes.

I do a lot of frozen breakfast for my own convenience, and I find that pancakes, waffles, and biscuits freeze just beautifully, and can be reheated in a toaster or toaster oven, which is very convenient.

Here's a recipe for breakfast sandwiches you freeze and nuke one at a time when you need them.

4 (16 1/3 ounce) cans refrigerated buttermilk biscuits
20 eggs
2 lbs ground sausage
16 slices sharp cheddar cheese
dry mustard (to taste)
pepper (to taste)
garlic salt (to taste)
butter or margarine

Bake biscuits according to package directions. While biscuits are baking start browning sausage. In a mixing bowl combine eggs dry mustard and pepper. Add egg mixture to the browned sausage and cook until eggs are done. After biscuits have cooled cut them in half and spread with butter. Sprinkle buttered biscuits with garlic salt. Cut cheddar cheese slices into fourths. Put one fourth of cheese slice on bottom half of biscuit. Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese). Place another fourth of a cheese slice on top of the egg and sausage mixture(putting the cheese on this way "glues" the sandwich together when it is reheated). Place top of biscuit onto sandwich. Wrap each sandwich in wax paper and put them in large freezer bags. Place them in the freezer. To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.

And now for the ever popular make ahead breakfast burrito. Again, you freeze these and then nuke 'em when you need them.

1 lb lean sausage meat
6-8 eggs, depending on size eggs
1 tablespoon minced onions
1/4 cup picante sauce
1/4 lb monterey jack cheese, shredded
12 flour tortillas
1 pinch salt and pepper, to taste

Spray a non-stick skillet with vegetable oil. Crumble sausage and
brown slowly. Drain in white paper towels. Wipe grease from skillet with paper towels, leaving a thin layer of oil. Beat eggs with minced onion and picante sauce.Scramble eggs in skillet until done. Toss sausage, eggs and cheese together. Spoon into tortillas and wrap, folding sides to middle and then rolling to make burrito. Place on parchment paper-lined cookie sheets; freeze until solid. Wrap individually in paper towels, and package in zipper-lock freezer bags. When ready to use remove burrito from Ziploc and microwave burrito in paper towel 2-3 minutes or until hot.

These can be used for both breakfasts and lunch. Once they are made, they are easy and beyond convenient. Grab and nuke stuff, all the way.
