Cover tightly w/ foil (season a bit now, later again when thawed), put in a 350ºF oven for about 3-3.5 hours total. Take off foil last 30 min or so to let them brown and caramelize.

I start them uncovered at 425° for an hour to seal & carmalize.
Then cover and turn down to 350° for another 1.5-2.5 hours.
Since the thickness varies, it's impossible to give an exact time.
get out the meat thermometer, Cook until they are 150° for rare to 190° for well.

if boneless, then about 12min per pound at 350. If bone in then about 8 min per pound same temp. more or less depends on how well done you like

Next time, use a crock pot and let them cook overnight, then add barbecue sauce in the pot......YUM!
