I have lots of leftover pumpkin bread and don't want to throw it out but I don't know what else I can do with it. has anyone ever tried an overnight french toast recipe using pumpkin bread?

crumble and make a layer and put in on the bottom of a baking pan. layer pudding and then whip cream. fridge and serve.

You can make french toast. Your pumpkin bread is already made, but here's an example. (You could make a bread pudding or trifle? if the bread is sweet enough.)


Pumpkin French Toast
Serving Size : 6

1 loaf (1 pound) unsliced brioche-style bread
1/4 cup sugar
1/4 teaspoon ground cinnamon
pinch coarse salt
1/2 cup canned pumpkin purée
1/2 cup half-and-half
4 large eggs
1 teaspoon grated fresh ginger
1 teaspoon vanilla extract
1/2 teaspoon grated orange zest
6 tablespoons unsalted butter
Pure maple syrup
2 tablespoons orange-flavored liqueur or orange juice

Trim ends of bread; cut crosswise into 12 (1-inch-thick) slices. Combine sugar, cinnamon and salt in a medium bowl. Whisk in pumpkin, half-and-half, eggs, liqueur, ginger, vanilla and orange zest. Pour mixture into a large pan. Add bread slices to pan; turn slices over. Cover pan with GLAD Press’n Seal™ Wrap and refrigerate overnight.

Preheat oven to 250°F. Heat two large skillets over medium-low heat. Add 1 tablespoon butter to each skillet. When butter is sizzling, add 2 bread slices to each skillet. Cook until bread is golden brown, 2 to 3 minutes on each side. Transfer slices to a cookie sheet; keep warm in oven. Repeat with remaining butter and bread. Serve with maple syrup.

Maybe do a stuffed pumpkin bread casserole thingie with it, if you have enough. Put a layer of the sliced bread in the bottom of your baking dish, top with slices of bananas, then another layer of the sliced bread. Pour your normal french toast mixture over it and then sprinkle pumpkin pie spice on top. Bake it off for about 20 or 30 minutes at 350F. Serve with whipped cream on top.

Sounds yummy to me, anyways. I may overbake some pumpkin bread tomorrow just to check my theory...

Try a trifle, just make pudding and layer with cool whip and the bread.

I wouldn't soak the slices overnight, just soak that AM and cook.

You can always freeze it for anotehr day... warm up in the toaster oven, spread w/ a little cream cheese.

it depends on how old it is. But the best way to get rid of something is to give it to someone that's hungry even if it's the people you work with or the guys that work on your car. Slather it up with cream cheese and take it to the office. Trust me it'll go.

you can freeze it or make bread pudding or french toast sounds good, especially if you add vanilla and cinnamon to the eggs

bread pudding sounds great, BUT I personally would rather just drink the egg nog
