My mother used to make them and they only have 5 ingredients. butter, vanilla, powdered sugar, flour and pecans. You roll them in a log or a ball and bake, cool, then roll in powdered sugar

INGREDIENTS
1 cup unsalted butter
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup chopped walnuts
DIRECTIONS
Beat butter in large bowl until light. Beat in 1/2 cup confectioner's sugar and vanilla. Add flour and mix until just blended. Stir in nuts. Shape dough into a ball, then flatten into a disc. Wrap in plastic wrap and refrigerate until cold.
Preheat oven to 325 degrees F (170 degrees C). Line cookie sheets with parchment paper.
Shape dough into 1 inch balls. Place on prepared sheets, spacing evenly. Bake about 20 minutes, or until firm and lightly colored.
Sift powdered sugar into a bowl. Transfer cookies to powdered sugar while still warm and roll gently to coat. Immediately transfer cookies to plastic bag and seal (this makes the cookies sweat and form an icing). Let stand 5 minutes in the bag. Transfer to rack and cool.

1 cup butter, softened
1/4 cup sugar
2 cups pecans, finely chopped
2 cups sifted all-purpose flour
powdered sugar
3 tsps Vanilla

Cream butter until soft.
Add sugar, pecans, and flour, mixing well.
Shape into balls and bake at 300 degrees on ungreased cookie sheet for 45 minutes.
While hot, roll balls in powdered sugar.
Roll in sugar again after all have been rolled once

SAND TARTS

1 c. butter
5 tbsp. confectioners' sugar
1 1/2 c. finely chopped pecans
2 c. all-purpose flour
2 tsp. vanilla

Cream sugar and butter. Blend in flour, vanilla and nuts. Flour hands well and roll out 1/2-1 teaspoon into balls. Bake on ungreased cookie sheet 12 to 15 minutes at 350 degrees. Cool.

ICING:

1 stick butter (NOT butter!)
1/2 box confectioners' sugar, sifted
1-2 tbsp. water, more if needed

Combine in double boiler. Remove from heat. Dip top half of sand tarts in icing. Icing may be tinted pink or green or may be left white.
