My favorite is "Seared Tuna"
2 tablespoons good olive oil, plus extra for searing
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled, minced fresh ginger
1 1/2 teaspoons minced garlic
2 ripe mangos, peeled, seeded, and small diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons minced fresh jalapeno pepper, to taste (1 pepper)
2 teaspoons minced fresh mint leaves
2 tuna steaks
Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
Serve the tuna on top of the mango salsa.

Maybe serve this with a green salad and baked potato...
"Tuna Steaks with Salsa" - 4 servings
1 cup shredded carrots
3/4 cup chopped peeled mango
2 tbsp. lime juice
1 tbsp. minced chives
1/4 tsp. salt; divided
1/4 tsp. pepper; divided
1/8 tsp. ground coriander
1/8 tsp. ground cumin
4 tuna steaks (6 ounces each)
For salsa, in a bowl, combine carrots, mango, lime juice, chives, 1/8 tsp. of the salt, 1/8 tsp. of the pepper, coriander and cumin; set aside. Sprinkle tuna steaks with the remaining salt and pepper.
Coat grill rack with nonstick cooking spray before starting the grill. Grill tuna, covered, over medium heat for 5 to 7 minutes on each side or until fish flakes easily with a fork. Top with salsa.

I assume you are talking about real tuna, not the stuff from a can.
I like to grill mine over a super hot flame, until it is seared on the outside but still rare on the inside. Slice it like you would a steak, and serve it with some rice & vegetables...makes a great light dinner.

Here's a few things that I do with Tuna—
1) Drain out the water, put it in a bowl and mix it with mayo. Put it in the fridge and wait about an hour until it's gotten cold. From that point, I'll eat it plain, I put it on regular bread. Or, if I am not too busy, I toast two slices of bread, put the tuna on the toast, then put a slice of tomato and romaine lettuce.
2) Drain out the water, put it in a bowl, and mix it with mustard. I leave it in the fridge for a few hours then I put it on Sesame Crackers.
3) When I was younger, my mom taught me a delicious recipe that I use today. You take a box of elbow macaronis and lay them on the bottom of a dishpan, take 6 cans of Chicken Of The Sea Tuna, empty them out (including water) into the large dishpan, then lay american cheese on top, and bake in the oven.

You could make tuna melts....mix tuna, onion, egg, bread crumbs...make a patty out of it and fry it for about 1 min and a half on both sides...then melt some cheese over the top. I like it without ans serve it with rice and a green vegie.

I like it seared, good and rare in the middle, on a bed of salad greens, with pickled ginger and a wasabi ranch dressing (Just mix wasabi powder with ranch dressing), maybe a sprinkle of black sesame seeds.
A nice bit of bread and a glass of Pacific Rim Reisling, and I'm set for dinner. :)

Just take it out of the can, chop it up, stick it in a bowl and mix a ton of mayonnaise in. Then, put in on two slices of bread and eat with a glass of milk.
