buy the maseca and mix it with some water and form the gordita, do this by taking some masa and shaping it into a meatball size or bigger and flatten it out, then place it on the comal and when its nice and brown and cooked start to slice it with a thin knife half way only, then fill it. to make the salsa, boil tomatoes and chiles, serrano or jalapenos until their tender, then put them in a blender along with some onion, cilantro and garlic and salt, liquify or leave a bit chunky. to make the green salsa just omit the tomatoes and substitute green tomatillos.

Gorditas
Yield: 1
Ingredients
1 lb ground beef
1 sm onion, chopped
2 ts salt
1/4 teaspoon pepper
1 ts garlic salt
1/4 teaspoon chile powder
Instructions
Shell:
2 cups masa harina
1 teaspoon baking powder
2 teaspoons salt
1 cup water
2 pieces bacon, fried and crumbled
2 tablespoons Longhorn cheese
Topping:
Shredded lettuce
Sliced or diced tomatoes
Shredded cheese
Fry beef and onion together. Season with salt, pepper, garlic salt and
chile
powder. While meat is cooking, mix with hands all ingredients for shells.
Pinch off small portion of dough and roll into 2-inch ball. With quick
patting motion, flatten out to 1/2 inch thickness and about 3 inches in
diameter. Fry in hot grease until golden brown, turning once. Drain. Make a
slit through the middle; open slightly like a taco shell and stuff with
meat
mixture, lettuce, tomatoes and cheese. Serve with favorite chile or taco
sauce.

INGREDIENTS
3-1/2 cups Corn Masa Harina Flour
2-1/4 cups warm water
1/4 cup vegetable shortening
1 teaspoon sea salt
1/2 cup unbleached all-purpose flour
2 teaspoons baking powder
Heat griddle or comal to medium to medium-low heat. Mix Masa Harina and water. Add lard, salt, flour and baking powder, kneading until blended and masa forms a ball, cleaning sides of bowl. Wet hands, shape into 1-1/2 to 2-inch balls. Cover to prevent drying.
With moistened hands, pat and flatten into 1/4-inch thick patty, forming a 3 to 4-inch circle. Place gordita on hot griddle or comal. Cook each side 6 to 8 minutes or until lightly browned.
OR - fry each gordita in hot 375 degree oil until lightly browned. Remove; drain. Slice gordita halfway through, forming pocket. Fill with lettuce, cheese, tomato, onion, sour cream or your favorite meat or bean filling, if desired.
