I'm getting ready to try a recipe from Curtis (the take home chef)
it's an apple tart. He says to put ingredients in a high sided copper pan. If I don't want to spend the money for this type of pan can i use a regular single layer cake pan? Does the metal in copper somehow do something different to the apples to make it better?

If you're putting the ingredients in the pan to cook on the stove top, then he means a pot. If you're assembling it in a pan to bake then a high sided tart pan is proper. I would guess it would be about 3 inches high. Copper is nice, but not everyone can afford it. It certainly does not affect the taste of the finished product. Good Luck

I dont think the copper has anything to do with the taste, you might use a spring form pan if you have one, it has high sides or even a bundt pan might work

I would NEVER use copper or aluminum for cooking. These metals are very toxic is mishandled. You can use any pan for you apple dessert!!
