CHRISTMAS FUDGE CHIP COOKIES
1 can Eagle Brand milk
2 tsp. butter
6 oz. chocolate chips
1 c. flour
1 c. white chocolate chips
1 tsp. vanilla
Melt chocolate chips and butter on low heat. Stir and add Eagle Brand milk, flour, chips and vanilla. Cool -- spoon by teaspoon on greased pan. Bake at 325 degrees for 10-12 minutes.
Peppermint Brittle
2 pounds white chocolate
30 small peppermint candy canes
Line a large jellyroll pan with heavy-duty foil. Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5 to 6 minutes. Stir occasionally, until chocolate is melted and smooth. Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks . Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour. Break into pieces by slamming pan on counter.
CHOCOLATE DIPPED MACAROONS
1 can (14 oz) sweetened condensed milk (not evaporated milk)
1 bag (14 oz) sweetened flaked coconut
1 Tbsp freshly grated orange peel
1 tsp vanilla extract
Whites from 2 large eggs
1 bag (12 oz) semisweet chocolate chips
Heat oven to 325°F. Line baking sheet(s) with foil. Coat with nonstick spray and dust with flour. Mix first 4 ingredients in a large bowl. Beat egg whites in a small to medium bowl with mixer on high speed until stiff peaks form when beaters are lifted. Fold into coconut mixture. Drop level measuring tablespoons about 1 in. apart on baking sheet(s). Bake 14 to 16 minutes until lightly toasted. Slide foil onto a wire rack. Let cool completely. Peel off foil; save foil. Melt chocolate chips as package directs. Dip bottoms of macaroons in chocolate. Replace on foil. Slide foil back onto baking sheets. Refrigerate until chocolate sets; peel macaroons off foil. Refrigerate tightly covered with wax paper between layers up to 1 week.

Ooooo. Make Snowball Surprises! The only time we got these when I was a child was around xmas. They are butter cookies with a Hershey's Kiss hidden inside. Yummmmm....
8 ounces unsalted butter, softened
3/4 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour, sifted
30 Hershey's chocolate kisses, unwrapped
powdered sugar
Cream the butter and sugar until fluffy.
Add the vanilla and mix well.
Add flour, combine well, and wrap in plastic wrap and refrigerate for half an hour.
Preheat oven to 350°F
Take dough out of refrigerator and break into balls large enough to cover a Hershey's Kiss.
Insert the Kiss and wrap dough around it, making sure it is completely covered.
Bake on ungreased cookie sheet until cooked through, about 10 to 12 minutes. Remove cookies from baking sheet to wire rack.
While still warm, sift powdered sugar on top. Cool completely.

Apple and Pear Streusel Pie
You can mix the topping and keep it refrigerated for up to 7 days.
For the Streusel topping:
1/2 cup all-purpose flour
1/4 cup light brown sugar
1/4 teaspoon ground cinnamon
4 tablespoons cold unsalted butter, cut into pieces
For the pie:
1 refrigerated or frozen 9-inch deep-dish pie crust (see above)
3 Granny Smith or other tart apples, peeled, cored, and sliced 1/4-inch thick
3 firm but ripe pears, peeled, cored, and sliced 1/4-inch thick
1/2 cup light brown sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1 tablespoon cold butter, cut into small pieces
Make the topping: In a medium bowl, mix the flour, brown sugar, and cinnamon. Add the butter and, using your fingertips, pinch the ingredients together into a sandy, crumbly mixture. Do not over mix; as soon as the mixture is sandy, cover and refrigerate until ready to use.
Heat the oven to 375 degrees F. If using a refrigerated crust, use it to line a glass pie dish. If using a frozen crust, let thaw at room temperature and gently remove the crust from the aluminum liner. Transfer to a glass pie dish.
In a medium bowl, toss the apples, pears, sugar, cornstarch, cinnamon, and butter together. Place the filling in the pie crust. Sprinkle the streusel topping on top and place the pie on a sheet pan to catch any juices. Bake for 40 to 50 minutes, until the crust is golden brown and the juices are bubbling. Check the pie after 30 minutes; if the streusel topping is already brown, cover lightly with foil.
Let cool at least 30 minutes before serving. Serve warm or at room temperature.

SWEET CHERRY COBBLER DESSERT
1 1/4 c. flour
1/2 tsp. salt
1/2 c. milk
1 1/2 tsp. baking powder
1/2 c. sugar
2 tbsp. melted shortening
2 c. drained cherries
2 c. cherry juice
3/4 c. sugar
2 tbsp. butter
Sift flour and dry ingredients add milk and melted shortening. Stir. Spread in 12 x 18 x 2. Put cherries on top. Combine cherry juice, sugar, and fat bring to boil. Pour over cherries. Bake 375 degrees for 45 to 50 minutes. Serve warm with ice cream.
