Cook the rice first (make sure it is not sticky rice), then lay it on the cookie sheet or something flat, let it cool over night, since it is cool and dry, it won't stick together too much, therefor you do not have to use too much cooking oil, it is healthier that way. Good luck and happy holiday.

"Oriental Fried Rice" - 4 to 6 servings

3 cups cold cooked rice
1/4 tsp. salt
1/4 cup slivered roast pork
1/2 cup finely chopped celery
1/3 cup sliced green onions (scallions), including tops
1/2 cup drained been sprouts
1 egg; beaten
2 tbsp. soy sauce
Dash ground black pepper

Heat rice and salt in well-greased skillet; add meat, vegetables and egg. Cook, stirring, for 3 minutes over high heat. Add a little shortening if rice tends to stick. Add soy sauce and pepper; cook and stir 1 minute longer.


"Chinese Fried Rice" - 16 servings

1 cup finely diced cooked ham, chicken or pork
1/4 cup salad oil
1 (6 oz.) can sliced mushrooms; drained
7 cups chilled day-old cooked rice
2 green onions (scallions); finely chopped
1/4 cup soy sauce
2 well-beaten eggs

In 12" skillet, brown meat in hot oil; add mushrooms, rice, onion and soy sauce. Continue to fry over low heat about 15 minutes, stirring constantly.
Add eggs and continue to stir for another 15 minutes or until dry enough to be fluffy. Add additional soy sauce, if desired.

It depends on what kind of fried rice you want to make. If you want to make Chinese fried rice, use Chinese rice. If you want to make Thai fried rice, use Thai rice.

I like Uncle Ben's white par-boiled white rice because it's not sticky, it's very loose and has a nice firm texture when it's cooked correctly.

Long Grain Rice. Unless you are making sushi rice or Pilaf......use long grain it is fit for EVERYTHING!
