It's only my Mom and I for x-mas this year and that's way too much turkey for us. What's some things I can do with all the left overs...and there's gonna be tons.

If you are going to keep it and cook it. Freeze the leftovers. You can make turkey sandwhiches, turkey salad. Turkey soup is good too, with noodles. If you do some veggies and turkey with gravy it's yummy over potatoes or biscuits. I also make turkey chili with white beans, it's a nice meal on a cold winter day.

Well there is always the infamous cold turkey sandwiches as well as making caseroles and stews. You can also freeze the turkey to be used at a later date. Try replacing hambuger in meals with the leftover turkey.

Don't cook the whole thing it is never good reheated.
I cut a turkey up into a whole bunch of packages. The breast slices make great veal dishes. Some I fry and use as chicken breast recipes. One thigh debone and fill with stuffing makes the two of us a great meal. Bake it and the drumsticks I chop up and cook with hamburger to extend it and make spaghetti, laszania and other dishes requireing hamburger. When you cook for two people you have to learn to divided meat into two servings pieces and then freeze in small bags. If it is not cooked up fresh it tastes like cardboard. So why cook the whole thing for one meal.
I cook up several slices of breast meat lay over the top of a box of bread stuffing, cover with cream of mushroom soup and just before serving top with melted cheese.

Make turkey noodle soup and turkey enchiladas. Find some elderly folks in your neighborhood that are alone and make up some plates for them. Freeze some of it for later! Man, that is a huge bird!

Freeze the leftovers in individual ziplocks and take them out as you need them.

You can make turkey soup from the bones

I like turkey tamales but it take a long time to make them

Turkey tetrazzini is very nice too

you could freeze some in zipp loc bags and keep some out for turkey tacos cut it up add taco sauce and you have your meat ready for turkey tacos or make a turkey sandwich pile turkey mayo lettuce fresh tomatoes dill pickles on a fresh bun yum yum. or make turkey and noodles get some amish made noodles they are the best ...

You can do a search for a local shelter in or around you neighborhood that you could assist with some meals. You can make up plates for those who are less fortunate or you could just donate the leftover meat (if you don't feel like making them a plate).
