The reason Peanut Oil is the preferred oil for frying and deep frying is that it retains it's oil integrity under high temperature where other oils chemically degrade and become rancid. However, be prepared because peanut oil not only cost more but sometimes it is hard to find. Go to Costco or Sam's club for the big deal on the large quantity.
