Yeasts are microorganisms from the kingdom Fungi -like microscopic mushrooms.
Some yeasts cause infections but there are many beneficial yeasts used to produce bread, beer or wine. Those processes are known as fermentations. When there is no oxigen, yeasts transform carbohidrates -sugars- into alcohol and CO2 and get the energy they need from the chemical reactions. The CO2 makes the bread rise while the alcohol evaporates. In the case of wine, the alcohol produced is the important bit.

Yeast is a bacteria that is activated by using warm water and a little sugar...It is then added to ingrediants for baking bread to help the bread rise....if that doesn't answer question write me and I will check my books for more specific or ask one of my instuctors for you....
