I have the spices down but my donair meat is always too grainy & crumbly. How do I make it more like the real stuff? More egg? more bread crumbs? I have about 1.5 lbs of ground beef.

Better with at least 3lbs meat but, here you go.

Donair Meat

1.5 pounds lean hamburger
2/3 cup bread crumbs
1 tsp pepper
1 tsp cayenne red pepper (depending on your taste)
3/4 tsp oregano
1.5 tsp paprika
1 tsp onion powder
.5 tsp garlic powder
.5 tsp salt

Combine all ingredients in a large bowl. Knead for 20 minutes. Shape into a tightly formed loaf. Bake on broiler pan for 1 to 1/2 hour at 300 degrees Fahrenheit. Cool loaves and slice thin. Meat can be frozen for future use.
