and should it be washed off before cooking ?

It is to take the water out of the eggplant. It doesn't matter if you wash it off or not. It can handle the salt, and most of it will be absorbed by the eggplant anyhow. If you don't "drain" the eggplant with salt for some minutes it will be messy when trying to fry it...or it will be soggy when trying to bake it.

The salt makes the eggplant "sweat" and draws out bitterness with the excess water in the vegetable, yes wash it off before cooking. Enjoy!

It draws moisture out of the eggplant. Usually I don't find this that necessary for the insides but if you don't do this to the skin, it will taste like shoe rubber when you cook it. It's really tough so the salt draws out the moisture, making it a little more soggy, so that it is pleasant to eat after cooked.

It draws the moisture out of the eggplant, which helps to keep it from getting all mushy. No, it shouldn't be washed off, because then you will add moisture to it, and have to resalt it, and then it becomes a never-ending process.

The salt will "sweat out" the bitter tasting juices, after sweating I usually rinse off the salt.

It causes the eggplant to sweat and release it's moisture, so when you cook with it, they food isn't super soggy..

Salt is used to "bring out the moisture".... if you don't you are left with soggy gooey Eggplant..........

if you are peeling it then no not really because everything inside is spongy-I just do a quick rinse- the salt is for seasoning?
