how about honey baked chicken

INGREDIENTS
1 (3 pound) whole chicken, cut into pieces
1/2 cup butter, melted
1/2 cup honey
1/4 cup prepared mustard
1 teaspoon salt
1 teaspoon curry powder
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a shallow baking pan, skin side up. Combine the melted butter or margarine, honey, mustard, salt and curry powder and pour the mixture over the chicken. Bake in the preheated oven for 1 1/4 hours (75 minutes), basting every 15 minutes with pan drippings, until the chicken is nicely browned and tender and the juices run clear.

Massage the bird with olive oil, then season it with garlic salt, and black pepper. Put a whole peeled onion in the cavity of the bird and put the whole chicken in a roasting bag with carrots, quartered red potatoes, and celery stalks. Close the bag and put it on a baking sheet with 5 small holes poked in the top of the bag for steam to escape. Cook the bird on 350 degrees in the oven for an hour and 20 minutes depending on it's size until it's done. Enjoy.

Here's my favourite idea, but I can't take credit -- it's totally a Jamie Oliver idea.

For lemon rosemary chicken

Put 2 - 3 sprigs rosemary (leaves still on the sprigs) inside the cavity of a chicken. Pierce a lemon all over with a knife and stuff in the cavity.

Great thing about this recipe is that the flavour of the rosemary and lemon is infused into the chicken meat from the inside out. Makes for a very moist and flavourful bird!

Enjoy!

"Garlic Clove Chicken" - 6 servings

1 roasting chicken (5 to 6 lbs.)
1 small onion; quartered
40 garlic cloves; peeled
1/4 cup vegetable oil
1 1/2 tsp. salt
1 tsp. dried parsley flakes
1/2 tsp. dried celery flakes
1/2 tsp. EACH dried tarragon, thyme and rosemary; crushed
1/4 tsp. pepper

Place chicken, breast-side up, on a rack in a shallow roasting pan. Place onion in chicken; tie drumsticks together. Arrange garlic cloves around chicken. In small bowl, combine remaining ingredients; drizzle over chicken and garlic.
Cover and bake at 350* for 1 3/4 hours. Uncover; bake 30-45 minutes longer or until a meat thermometer reads 180*, basting occasionally. Cover and let stand 10 minutes before slicing.

Stuff the chicken loosely with fresh chopped carrots, onions, celery, garlic and any fresh herbs you like. Then melt a stick of butter and add chopped garlic to it. Let it simmer together for a minute or two and then baste the chicken with it. Sprinkle salt and pepper on it, if you like and bake. When it's done the liquid makes really good flavored gravy. You can eat the veggies if you like, as long as they are fully cooked to temp.

Hi, I do whole chickens all the time! I really like what Teamkimm said. Her recipe sounds great! I like to put garlic inside with some salt and pepper. Also I put about 1/2 cup of chicken broth in the pan. Cover it with foil.( spray foil first) I put it on about 225. I let it cook for about 5hrs. Then I take the foil off, up the heat to 325. Let it cook for about 1/2 more. Take out of oven. Use the drippings to make gravy!

You get like this packaged chicken spice you can put on, or what I really like is simple flavours like garlic, olive oil, rosemary/oregano, and lemon. Simple is best!
