Because the Romans destroyed all of Jerusalem including the temple and scattered all the Jews all over the world as slaves. Israel was wiped off the map in 70 A.D. There have been no sacrifices since then. When the sacrifices start again, it will be past time to look up.

When Jesus died on the cross, the temple was destroyed by God, and the curtain that gave access only to high preists into the "Holy of Holies" (where Gods presense was) was ripped from top to bottom as a sign that Jesus was the ultimate sacrifice and he died for everyone. (So no more sacrifices were needed). Once this happened, everyone had access to God though the Holy spirit which Jesus sent down to us when he ascended into heaven (after rising from the dead).

I dont know why the modern day Jews do not still practice sacrifices since they do not believe Jesus has come to save us yet... A very interesting thought since they still practice passover and other traditions that are thousands of years old.
