CHOCOLATE COOKIES are the ONLY kind of cookies or desserts I make for the Holidays...

Here's why: typical "Christmas" cookies tend to lack chocolate of any kind. Except for the "Mexican Wedding Cake" (powdered sugar-coated round nut cookies), most Xmas cookies end up getting thrown away.

those awful "Sugar cookies" suck big time, you just wanna spit them out!!! And don't get me started on "Gingerbread Men" or "BOURBON BALLS" (gag me)...LOL

Seriously, those "Holiday Cookie Exchanges" have a huge "Chocolate Deficit". the chocolate cookies are ALWAYS the first ones to be eaten and consumed....

Therefore, make sure ANYTHING you make contains Nestle Toll-House Morsels (semi-sweet chocolate chips).

"Congo Bars" are one of my personal faves (but you may not like the coconut in them)

"Toll House Cookies" can be baked into santa shapes and frosted with ugly green/red frosting (but I don't ruin my toll house cookies that way).

"Rice Crispie Treats" can be made with Cocoa Krispies, chocolate chips, and frosted too!

The other day in the teachers lounge(I'm a middle school teacher) I picked up a great Christmas dessert recipe that might do just the trick. Ive heard it called "Cracker Candy" and the result tastes something like a chocolate and toffee covered pretzal.(Yum!) The recipe is incredibly tasty and easy.

Recipe: Cracker Candy
Ingredients
1 Cup Butter
1 Cup Brown Sugar
1 Box Saltine Crackers
1 12 oz bag of chocolate morsels(any flavor)

1. Preheat the oven to 350

2. Line a baking pan(one with sides) with foil. Cover the entire baking pan with saltine crackers leaving as few gaps as possible.

3. In a pot bring 1 cup butter and 1 cup brown sugar to a boil and cook for 3 minutes.

4. Pour the butter brown sugar mixture over crackers and spread evenly.

5. Bake cracker-sugar mixture in the oven for 8-10 minutes until bubbly. Be careful not to let it burn

6. Take out of the oven and immediatley pour the entire bag of chocolate morsels on top of the crackers. When chocolate melts spread evenly and let cool for about an hour.

7. Put baking pan in the fridge until the mixture has hardened and cooled.

8. Break into pieces and enjoy!

My favorite Xmas cookie. Made 2 batches so far this holiday season.

Zimtsterne (Cinnamon Stars)

3 tablespoons butter or margarine
1 ½ cups sugar
2 whole eggs
1 egg, separated
1 teaspoon lemon juice
2 1/3 cups all-purpose flour
2 ½ teaspoons baking powder
1 ¼ teaspoons cinnamon
¼ teaspoon nutmeg
½ cup finely chopped walnuts

Heat oven to 375 degrees. Mix butter, sugar, 2 whole eggs, 1 egg yolk, and lemon juice until fluffy. Measure out flour. Stir dry ingredients together; blend into sugar mixture. Stir in nuts. Roll dough, 1/3 at a time, to 1/16” thick on lightly floured board. Cut with a star cutter. Brush tops of cookies with remaining egg white beaten until frothy. Bake on lightly greased baking sheet 6 to 8 minutes. Makes 6 to 9 dozen cookies, depending on size of cookies.

This year I made Cranberry & White Chocolate Chip cookies for the first time. They were very easy & so festive looking.
I also made good old Chocolate chip cookies & Persimmon & Pecan cookies. The persimmon cookies were really fun and a learning experience at the same time.

so far I have made approx 150 each of snickerdoodles chocolate chip, peanut butter kiss, oatmeal w/ butterscotch chips, Russian tea cakes & sugar cookies only a small batch of the sugar,

Candy is getting started on wednesday I will make several batches of chocolate fudge and buckeyes and then we'll say how much time is left.

I give out a lot of cookie & candy plates to friends and neighbors.

We always make candy coated pretzels! They are AMAZING!!!

Just buy Almond Bark, melt it in the microwave, and coat pretzels in it. YUM!!! They are sooooooo good!
