I'm in charge of making the dessert for our Christmas Eve get together, but what's a good thing to make? I feel like cake is for a birthday party and I don't have a lot of recipes for sweets. I need help!

Triple Chocolate Chip Ice Cream Sandwiches

1 (17.5-ounce) package chocolate chip cookie mix
1 stick butter
1 egg
1 (12-ounce) bag mini chocolate chips
2 pints chocolate chocolate chip ice cream

Preheat oven to 375 degrees F.
In a mixing bowl, combine cookie mix, butter, egg, and 1/2 cup chocolate chips. Stir to form dough. Drop by rounded tablespoons onto ungreased cookie sheet. Bake in preheated oven for 10 to 14 minutes. Cool for 1 minute on cookie sheet before transferring to wire rack. Cool cookie completely, and then freeze for a minimum of 1 hour before completing ice cream sandwiches as directed.

Soften ice cream on the counter for 10 minutes prior to making sandwiches. Remove cookies from freezer, place a scoop of ice cream on the backside of 1 cookie. Sandwich with another cookie and carefully press together until ice cream reaches the edge of the cookies. Roll edges in remaining chocolate chips. Freeze for 10 minutes, then serve

3/4 cup oats
3/4 cup flour
2/3 cup light brown sugar, packed
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch kosher salt
1 stick cold unsalted butter, diced
4 Braeburn apples (Fuji will substitute)
4 teaspoons honey

In a bowl combine all the dry ingredients and diced butter. Rub mixture briskly between finger tips until it forms small moist clumps in a loose sandy mixture. Refrigerate while preparing the apples.
Cut a small layer off the bottom of each apple to create a flat, stable bottom surface. With a small paring knife, cut a cylindrical cone out of the top of the apple, moving about 1-inch outside of the core, similar to removing the top of a pumpkin when carving a Jack O'Lantern. Remove the top and discard. With a melon baller or a teaspoon, remove the remaining core and seeds taking care not to puncture the base of the apple.

Place apples on a baking sheet or pie dish and fill each center with a teaspoon of honey. Spoon in mixture, packing lightly until heaped and overflowing over sides of the apples.

Bake in oven at 350 degrees on the top or middle rack for 40 minutes or until filling is golden brown and the tip of a paring knife can be inserted into the side of the apple with little or no resistance. Let apples stand for 10 minutes before serving.

After a rather filling meal I like "gelato," an Italian dessert like ice cream but far more light and fluffy, and particularly the type containing berries. We're lucky enough to get ours at Costco, but some better markets and even Italian restaurants carry it. For a stronger flavor, a dish of sherbet--orange or lime--with a teaspoonful of vodka over it is what we call a "citrus explosion." For those who avoid alcohol or are too young, stir together orange sherbet with a good quality vanilla ice cream. Better than Dutch apple pie a la mode? My favorite quote is a Stengelism: "Nobody can keep people from not going to the ballpark."t

Hi, it depends where in the world you are, USA Latitude the more North, think warm and cuddles, Hot Mince Pies and fresh made anything straight off the griddle chocolate chip cookies, cook all just prior to serve if possible.
Down South in the Tropics it's quite different, cool fresh fruit is always good served in a nice sculptured form you know something to talk about, finger food, with a drink to the acceptance of all present their personal choice, always remember they will remember the difference at your Party, a little attention to detail on the slightly unusual ,a dash of dare in how you want to be percieved.
OOPs I forgot to mention, diverce choice, and abundance of sweetness with ,yess those Lovely develish callories, Cream , double cream, wipped cream and Ice cream, the double S in Yess, means everyone likes those options.

Raspberry Fantasy

1 6 ounce package raspberry gelatin
1 cup boiling water
2 10 ounce packages frozen red raspberries, thawed but still cold
1 8 ounce can crushed pineapple, undrained
2 ripe bananas, cubed
2 cups dairy sour cream
fresh raspberries
lemon juice

Dissolve gelatin in boiling water. Add thawed raspberries, pineapple and cubed bananas. Chill mixture until syrupy. Using a chilled bowl and beaters, beat the sour cream until it stands in soft peaks, about 5 minutes. Fold sour cream into gelatin mixture. Pour into a 2 quart mold which has been rinsed in cold water; chill until very firm, at least 4 hours. Unmold onto a chilled serving platter. Garnish with fresh raspberries that have been dipped in lemon juice.

Christmas Caramel Popcorn Recipe
6 quarts popped popcorn
2 cups brown sugar
1 cup butter
1/2 cup light corn syrup
1 teaspoon salt
1 tablespoon vanilla
1/2 teaspoon baking soda
1 package candy coated chocolate candy pieces

Directions:

In saucepan, combine brown sugar, butter, corn syrup and salt. Bring to a boil, stirring occasionally. Boil for 5 minutes. Remove from heat. Stir in vanilla and baking soda.

In large roasting pan, combine popcorn, candy coated chocolate candy pieces and sauce mixture. Toss until completely coated.

Place in 200 F oven for 20 minutes. Allow to cool for 10 minutes, then stir gently. Remove from oven and let cool completely on baking sheets.

"Cherry Cream Cheese Pie"

1 (9") graham cracker crumb crust
1 (8 oz.) pkg. cream cheese; softened
1 (14 oz.) can sweetened condensed milk
1/3 cup lemon juice
1 tsp. vanilla extract
1 (21 oz.) can cherry pie filling; chilled

In large mixer bowl, beat cheese until fluffy; gradually beat in condensed milk until smooth. Stir in lemon juice and vanilla; pour into prepared crust. Chill 3 hours or until set; top with desired amount of pie filling before serving. Refrigerate leftovers.

A nice fresh fruit pie tart [you can buy good ones at any bakery in a grocery store.

THEN some egg nog [take store bought egg nog, add egg nog ice cream, 'spike' with rum and sprinkle with nutmeg]

Or if egg not is not your preference...try hot buttered rum...very easy to fix. Fix hot water like you were making tea; add a jigger of good rum; then add a pat of real butter ;1/2 tsp of white sugar, 1/2 tsp of brown sugar...stir and top with whipped cream.
