I have some left over baked sweet potatos that i made last night. What can i do with them for tonight?

MAMA'S SWEET POTATO PIE

1 large can yams
approximately 1/2 cup pineapple juice
1/4 cup butter
1 egg, slightly beaten
1/4 tsp. salt
1/4 tsp. cinnamon (add more to taste)
large marshmallows
graham cracker crumbs

Preheat oven to 350°F. Drain and mash the canned yams. Mix in all of the other ingredients (except for the marshmallows and cracker crumbs - they are your pie toppers). Mix the pineapple juice in to your liking. When you are satisfied with the mix, pour into a baking dish. Take the marshmallows and push them in all around the edge, let the tops stick out. Take your cracker crumbs and sprinkle them in the middle. Place the dish in the oven and let cook - uncovered - for about 30 minutes.

Ingredients
1 cup mashed, cooked sweet potato*
1/4 cup sugar
1 beaten egg
1 tablespoon margarine or butter, melted
1 cup milk
3 cups self-rising flour
1 teaspoon baking powder
1/2 cup shortening

Directions
1. Combine mashed sweet potato, sugar, egg, and melted margarine or butter in a mixing bowl. Beat with a fork until smooth. Stir in milk. Set mixture aside.

2. Stir together self-rising flour and baking powder in a large mixing bowl. Cut in shortening until mixture resembles coarse crumbs. Make a well in the center of dry mixture. Add sweet-potato mixture and stir just until combined.

3. Turn out onto a well-floured surface. Knead gently for 10 to 12 strokes. Roll or pat dough to 1/2-inch thickness. Cut with a floured 2-1/2-inch biscuit cutter. Reroll as necessary. Place biscuits 1 inch apart on a large baking sheet.

4. Bake in a 400 degree F oven for 15 to 20 minutes or until the biscuits are lightly browned. Makes 16 to 18 biscuits.

*NOTE: To make 1 cup mashed potatoes, peel 2 medium sweet potatoes (about 1 pound total). Cut into 1-1/2-inch chunks. Place in a large amount of boiling water. Simmer about 20 minutes or until very tender. Drain. Mash with a potato masher or beat with an electric mixer.

sweet potato corn muffins

Vegetable oil for greasing muffin cups, plus 1/4 cup
3 slices bacon
3/4 cup all-purpose flour
1 1/2 cups yellow cornmeal
2 teaspoons baking powder
1 tablespoon sugar
Pinch salt
1 egg, slightly beaten
1 cup mashed sweet potato
1/2 cup buttermilk, plus more as needed

Preheat the oven to 350 degrees. Grease 12 standard muffin cups and place in the oven to heat. In a skillet, cook the bacon until crisp. Drain on paper towels, crumble, and set aside in a bowl. In a large bowl, stir the flour, cornmeal, baking powder, sugar, and salt together. In a medium bowl, mix the egg, oil, sweet potato, and 1/2 cup buttermilk together. Stir the wet ingredients into the dry ingredients just until blended; the batter should be slightly lumpy. Add another 1 to 2 tablespoons of buttermilk if the dough seems too stiff. Gently fold in the bacon. Spoon into the prepared muffin cups. Bake for about 25 minutes, or until the muffins are browned.

Just take the skin off, mash up the potatoes, with 1 little pad of butter and a little salt, beat one egg and then add it to the mix. Add 1/4 tsp of cinnamon, nutmeg, and ground cloves and a hand full of pecans, or Walnuts. mix well. Add 1/2 cup of (buttermilk,heavy whipping cream, or half and half.) and 1 cup of plain bread crumbs. Add 1/2 cup of Riccota cheese or Marscapone cheese and now place plastic wrap over the bowl lightly press the wrap onto the mix so it dosen't create a film. Place in fridge.......

Wait 15 Min then........

Get a non-stick skillet out and place on stove pre heat on medium. add 1 tbs of Canola oil (make sure it's not EVOO(extra virgin olive oil)and place in skillet.) To that add 1 tbs butter. let it melt. then take your sweet potate mix and use an Ice cream scoop and add each scoop just like you would pancakes, when theres little bubble on top thats your que to flip. Make as many as you want. No need for a surup, just ad a pad of butter and sift some powder surger over them. Thats you decision on how much sugar and how sweet you like it. If there is left over mix just place the plastic wrap again and put in fridge. Mmm Mmm Mmm. It will last approx.2 days.

I prefer sweet potatoes over yams. It's probably because sweet potatoes are SWEETER. I can eat them plan but love ot add marshmellows and brown sugar to them for extra sweetness. Also there is a good casserole you can make with them that includes marshmellows, brown sugar, pinneapples and nuts. So good! Glad it's thanksgiving tomorrow!

Diced them and make home fired sweet potatoes, when I was a chef we would mix them just for a treat, cook them like white potato home fires with onions or green onions and a dash of salt and pepper.

Make sweet potato casserole out of them using pecans, brown sugar and marshmallow.

Mash as regular white mashed potatoes--then put some butter in a frying pan and heat--turning occasionally.

sweet potato pancakes or add other veggies and put them into the pancakes and fry simply the best

you could slice them up and fry them just like regular potatoes but with out onions. merry christmas.
