My wife & daughter refuse to allow saffron in any cooking other than Middle Eastern.

They allow me to put saffron in "Dolmas" (stuffed grape leaves with lamb/rice filling) and "rice pilaf" (middle eastern rice with or without orzo pasta)

Once when I tried to put saffron in turkey gravy, they went on a "revolt" and refused to eat the mashed potatoes with my "experimental" gravy.

They say I'm crazy.....the next thing you know I'll be putting saffron in my cookies!

Uses for Saffron:

It is very expensive that is why it isn't used in everything.

Most popular uses for it:

* Added to breads so when you serve them hot you see streaks of yellowing in the dough.

*Added to rose water ( a china cup full) and sprinkle over any rice dish. Make it go a long way and do what I do, wash any jar , fill with rose water, add a few strands of saffron and refridgerated. Use whenever you need a little.

*Add to marinades to colour meat a little.

* Add to tea to give it that little extra colour.

* Add a teeny bit to custard type desserts and rice puddings.
