Hey don't worry !...it's just the suet which is used to add a richness to the flavour and moisture to the cake. The suet tends to melt away on cooking anyway and you won't see any white bits in a sweet mince pie.....they're too nice to have just at Christmas time...I make 'em all year round !!!!

It's suet. If you live in a country where ready packed suet (Atora) is not available, it's made from the fat surrounding the kidneys, which is then minced. You'll never be able to face a mince pie or steak and kidney pudding again.

It's beef suet. If you are a vegetarian check that it is vegetable fat instead.

Fat, gristle, sinew and lots of other yucky stuff. Get a miner and mince your own then you know whats in it.
