I believe it is a form of fat that is not water-soluble. It forms platelets within the blood which adhere to the walls of the arteries making it increasingly harder for the blood to freely move through.

Supposedly some types of fat are good for you, while some aren't (instead of all fat being bad). Trans fat is the bad fat. Personally, I think it's a load of malarkey, but I'm a bit of a skeptic.
