what are the best apples for pies and does anyone have a good recipe for one. making pies for christmas, does anyone know any other good pies to make and the recipes for them

Carmel apple pie
Pie Dough, recipe below
7 large Granny Smith or Pippin apples, peeled and cored
1 cup sugar
3 tablespoons quick-cooking tapioca
1 teaspoon ground cinnamon
1/2 teaspoon salt
Juice of 1/2 lemon
1 tablespoon heavy cream
1 large egg
Caramel topping, recipe follows

Butter and flour a 9-inch glass pie plate. On a lightly floured surface roll the dough to a 12-inch round about 1/8-inch thick. Line the pie plate, being sure to press the dough into the bottom and up the sides without stretching. Chill 30 minutes. Roughly chop the apples into small pieces, about the size of lima beans. (The apples should measure about 9 cups chopped.) Combine with the sugar, tapioca, cinnamon, salt and lemon juice in a large bowl. Set aside until the juices begin to run, about 10 - 15 minutes. Beat together the cream and egg to make a glaze and brush over the edges and bottom of the crust. Mound the apple filling in the pie shell. It will be quite full. Roll out the remaining dough to a large round about 1/8'' thick. Place over the filling a seal the edges together by gently pressing together. Trim any excess dough with scissors and flute the edges. Brush the top with the remaining egg glaze. Using a paring knife, cut out and remove a circle the size of a quarter from the center of the top crust. Cut 5 or 6 slits in a spoke pattern beginning 1/2-inch from the center hole and ending 1/2-inch from the outside edge. Chill for 30 minutes before baking.
Preheat oven to 425 degrees. Place the pie plate on a cookie sheet and bake 10 - 15 minutes, or until the top is golden brown. Reduce the heat to 300 degrees and continue baking until the juice visible in the center becomes thick and bubbly, about 1 hour (if the edges are browning too quickly, cover with aluminum foil). Meanwhile prepare the caramel topping. Spoon the hot caramel over the top of the pie to coat and return to the oven. Bake 5 minutes longer, or until the caramel sets. Cool on a rack before serving.


CARAMEL TOPPING
1/2 cup packed brown sugar
4 tablespoons unsalted butter
2 tablespoons heavy cream
1/2 cup pecan halves


In a small saucepan combine brown sugar, butter and cream. Bring to a boil and cook for 2 minutes. Remove from the heat and stir in the pecan halves.

PIE DOUGH
2 cups all-purpose flour
1/2 cup lard
2 1/2 tablespoons unsalted butter
1/2 teaspoon salt
About 1/2 cup iced water


In a large bowl combine the flour with the lard, butter and salt. Mix lightly with your fingertips until the dough forms grape-sized pieces. You should be able to see chunks of fat. Stir in the iced water. Lightly knead, handling the dough as little as possible, until the dough forms a ball. Add a little more iced water if necessary. Transfer to a plastic bag and shape into a log. Seal the bag, pressing out any air, and chill for as little as 1 hour or as long as 3 days. The pie dough can be frozen for as long as a week.

I usually use McIntosh apples for pies or for apple crumble.
For a great apple pie, just peel and cut up your apples, no need to be fancy. Put the cut up pieces in a big bowl and toss them with about 1/3 cup sugar and 1 teaspoon of cinnamon. Add some nutmeg too if you like. Dump all this into your pie crust (It should mound way over the top of the dish, apples shrink a LOT when they bake!!) Cover with a top crust, poke some holes in it with a knife to let the steam out and bake it at 350°F for about an hour.
(Just keep an eye on your crust, that shouhld tell you when it's done, or poke with a knife to make sure apples are not crunchy)

Other great pies for Christmas are pecan (sorry, I don't have a recipe here with me, but to make it really really good add about 1/2 cup of dried cranberries to the filling!!) or pumpkin pie.
For pumpkin, the recipe is on the can of pumkin pie filling that you can buy, it turns out great, just serve with a bit of whipped cream.

This is the cooking and recipes section, not the charity section. Back off her. There's nothing wrong with wanting to bake pies for one's family for Christmas. Anyway, for all you know, she could run a homeless shelter.

And, I wish I could help, but I've never made a pie. I would think that Granny Smith apples with caramel would make for good ingredients, though! With caramel ice cream on top, of course.

Christmas Pies

Ingredients:
*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*

Filling:

1/2 cup raisins
1/2 cup sultanas
1/4 cup dates
1/4 cup candied peel
1/4 cup glace cherries
1/4 cup flaked almonds
1 ripe banana, peeled
4 tbsp. Brandy or whisky
1/2 tsp. ground ginger
1/2 tsp. grated nutmeg
1/2 tsp. mixed spice

Pastry:

1 cup flour
1/2 cup shortening
6 tbsp. cold water

Cooking:
*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*-*

Filling: mix everything together either by hand or, if you desire a smoother texture, in a food processor.

Pastry: rub shortening into the flour until the mixture resembles fine breadcrumbs. Add enough flour to enable the pastry to hold together. Roll out pastry and cut into 12 cm circles. Press circles into the bottom of lightly oiled baking tins. Put the filling inside and cover with another pastry circle. Press down at the edges and make a small steam hole in the top.

Bake for 10 minutes in a hot oven. These pies can be frozen before baking either in the tin or removed from tin once they are solid. Filling will keep for 1 week covered in the fridge.

Pecan Pie

3 large eggs
1 cup sugar
1/2 teaspoon salt
2 Tbsp melted butter
1 cup light corn syrup
1 1/4 cup pecans
1 tsp Vanilla
1 unbaked 9" pie shell
Preheat oven to 375º F, beat eggs, vanilla, sugar & salt. Add butter & syrup & mix in pecans. Bake 40-45 minutes in pie shell.

MARLBOROUGH PIE (Made this for Thanksgiving. Got raves!)

1 1/2 c. applesauce
3 tbsp. butter, melted
1 c. sugar, or to taste
1/2 tsp. salt
3 tbsp. lemon juice
1 tsp. lemon rind, grated
4 eggs, slightly beaten

Blend all ingredients thoroughly and pour into an unbaked pie shell. Bake for 15 minutes at 450 degrees. Reduce heat to 275 degrees and bake another hour until consistency of custard.

Fudge Pie

1 frozen pie crust
3 TBSP cocoa
1/4 cup flour
1 tsp vanilla
1 stick butter, melted
1 cup sugar
2 eggs

Mix dry ingredients. Add butter, eggs & vanilla. Mix well and pour into unbaked pie shell. Bake at 350 for 10-15 minutes. Let cool for center to set. Don't overbake!

Granny Smith apples (green) are usually the best pie apples because they stand up to the baking and create a really nice flavor. I would go to www.foodtv.com for some really good pie recipes. Good luck.

If you want something easy just buy the can of apple filling in a can and then the frozen pie crust and assemble.

Sounds unique and distinctive.that's what makes it particular. i'm specific they're going to like it. you need to have them help you're making it too.it could be a exciting recipe to cook dinner. Are you a cook dinner your self?Sounds genuine stable, i'm questioning of coming up that now.
