why is it that in some baking recipes it says to let the dough stand for an hour and in others it says to let the dough sit for an hour and still others to let it rest for an hour?

Haha, it just depends on who's writing the recipe, different people say different things differently (whoa, I used different too many times...). No way is better than the other, they're all saying the same thing.

Depends upon the recipe... What you're making and what stage you're at...

In general, all three mean the same thing.
Stand = Sit = Rest = Do not work the dough for the allotted time.

For yeast doughs, letting the dough Stand or Sit means letting it rise.
While letting it Rest means you've already let the dough rise after Standing or Sitting and you just punched the dough down. Resting allows the glutens to relax and uncoil so the yeast dough can be rolled out without it springing back.

For pie dough/crust, letting the dough Stand, Sit or Rest (usually in the refrigerator) means you're allowing the dough to cool so the fat can solidify which helps form a flaky pie crust when baked.

Of course, recipe authors sometimes use the words interchangeably without giving thought to the nuances of the three words.

They really all mean the same thing. Just leave the dough alone for an hour so it can rise.

so the gluttons in the flour can rest and also if you are rolling out dough it makes if easier to roll once its rested.
