I don't know any simple recipes, but I'm in the same boat. My husband is from El Salvador and I've been trying to teach myself to cook, including some of his favorite dishes from back home. I basically searched and googled recipes on the web, occasionally I found a video on YouTube or Yahoo Video of someone showing off their cooking skills. Make a day of it. Find the top 3 or 4 recipes and spend the day cooking them. It helps if the recipes share similar ingrediants. That way you can get all your chopping and prep done at once and use as needed. Don't forget to take notes on how things came out. You may have to correct something or tweak it to your preference. Little by little you'll get there. Have fun with it!

You should strat out with the simplest stuff and you will get into it more and more. Start with sandwiches. Progress to boiled egg. Then progress to a scrambled egg.

You need to learn the basics. Cooking time for different things. Basic properties of ingredients.

Here is a scrambed egg recepie for you:
You will need 4 eggs, a few white mushrooms, 1 tomatoe, 1/2 of white onion, 1 small bell pepper (or 1/2 of bell pepper) and a lttle bit of shredded cheese (any king, mozarella will do) a little bit of oil and a little bit of salt and pepper.

Wash and cut the vegetables. Saute them lightly on the frying pan. Add eggs. Scramble. Add cheese when the eggs look ready. Add salt and pepper.

Try this. And don't be afraid to mess up. The worst that will happen you waste the food. It's not that much money. But you will get experience.

Try www.savingdinner.com. The Dinner Diva, Leanne Ely, has written several cookbooks and has produced a DVD of cooking basics. Her aim is to help restore the family dinner, which sometimes means educating the novice cook. Her work is very down-to-earth and straightforward. She has several sets of sample recipes with serving suggestions included. She also discusses the basics of stocking your pantry and kitchen tools that all cooks should have, to make cooking a fun and creative exercise, and not a dreaded chore.

Additionally, go to your library or bookstore and look at a copy of the Betty Crocker Cookbook. I have the 2001 edition, and it details many basic techniques from how to cut meat and vegetables, to how to determine if the dish is finished. Recipes range from the basic (pancakes, spaghetti sauce, roast chicken) to the spectacular (crown rack of lamb).

My favourite recipe (one that I use all the time):
Marinate some chicken wings/drumsticks in chopped garlic and ginger, and soy sauce (add some water otherwise it would be really salty). Then roast with honey. This makes great finger food/starters/picnic food!
This makes a good alternative to sunday roasts aswell - just serve with the usual veg and gravy, it's even tastier!

A quicker recipe:
Place some chicken breasts (1 per person) into an ovenproof dish with broccoli and carrots. Mix a can of Campbells chicken soup according to the label and stir in a pinch of curry powder, then add to the chicken and veg. Bake in the oven for 45mins to an hour on 190C. Serve with jacket potatoes. Yummy!

Try googling it too, Im sure you can find some easy recipes online. I learned how to make an amazing pepper chicken and rice dish from the back of a can! Give it a shot:) Good luck!

Buy some bacon and spinach. Pan fry the bacon, remove such, and cut into small pieces. While the bacon grease is very hot, pour over the spinach in a large bowl, and toss with a little salt, pepper and left over bacon. Add a little goat cheese, and your first course is set.

For second course, buy some kind of whitefish, pearch, cod, talipia, and some bread, of course. Put a little butter in a bottom of a saute pan, add your fish filets, and a little chicken stock, or white wine. Place cover on pan, bring to boil, and then turn down to simmer. In ten minutes you'll have perfectly poached fish.

Put a flour fajita in a oven safe pan with Pam cooking spray
put 1/4 can of re-fried beans and cheese , spread around fajita(I used Shredded Cheddar chz)
repeat layers 3 times. Top layer chz and some salsa.
Cook for 20 minutes on 350 deg.
Very easy and good.
I made it a little different for me. In a pan w/ a little oil I cooked green pepper & onins (cut in long thin slices) untill they where almost soft. (keep an eye on them and stir them so they don't burn. In between refried beans and the chz I arranged them on every layer. Ymmmmm

Yes:

1) homemade stew is easy - buy 2 cans of broth and you can throw in other cans of veggies that you like and heat on the over at 350 for 10 minutes to warm up.

2) boiled eggs are easy. Heat on stove to a boil for about 10 minutes and then peel and eat or job and put on a salad. Salads are easy if you buy the premade stuff and a box of croutons and a cucumber to go with it.

3) cook ground beef in a skillet at medium heat for about 20 min. until not pink then add chopped white onions, chopped mushrooms, and a can of spegetti sauce, Put on pasta for spegghetti. Or put salsa on it instead of spegetti sause then put in tacos with some cheese on top.

You can too cook. Anyone can, if you follow the directions.....a recipe.

Easy ones I have made recently that hubby loved...

Chicken Breasts, butter, cream cheese with chives, bacon.

Spread the cream cheese with chives on one side of chicken breasts, add a pat of butter, roll up, wrap in 2 pieces of bacon. Bake at 350 for 25 minutes.

Enchilada Casserole

Brown 1 lb ground beef and drain. Line 13 x 9 baking pan or casserole with corn tortillas, Mix refried beans, ground beef, 1 chopped onion, 1 can sliced olives, jar of salsa and one can of enchilada sauce together and pour over tortillas. Bake 30 mintues at 350. Serve with shredded cheddar on top.

Good luck!
