Saute chicken breast strips in olive oil, let cool down, slice a cucumber, cut up some broccoli, cube up a couple of avocados, cut a tomatoe small pieces, now slice up the chicken, add a few imported olives ,, black and green and cube up some french bread mix all together ,, a little salt, pepper, celery powder, and a little of your favorite dressing if you like or alone is great also .. This is really pretty quick and delicious ,

You can't go wrong with a good stir-fry!
I like to marinate a chicken breast for a few hours or over night (like a teryaki marinade). Then slice it up into smaller strips and put the chicken AND the marinade into a flat-bottom wok or a deep pan with a little peanut oil turned on medium-high heat. Also cut up some of your favorite veggies (for instance I like carrot, green pepper, red pepper, and onion) and toss them in with the cooking chicken and just stir it all up, swirling it around over the heat. Put in a few ounces of water if you want a bit more "sauce" to develop.
Serve it up over some steamed white rice, and tada!

Pasta Puttanesca
2 Tbsp. extra-virgin olive oil
4 to 6 cloves garlic, chopped
1 tin flat anchovy fillets, drained
½ tsp crushed red pepper flakes
20 oil-cured black olives, pitted and coarsely chopped
3 Tbsp. capers
1 (32-oz) can crushed tomatoes
1 (14.5-oz) can diced tomatoes, drained
A few grinds black pepper
1/4 cup flat leaf parsley, chopped
1 pound spaghetti, cooked to al dente
Crusty bread, for mopping
Grated Parmigiano Reggiano or Romano, for garnish
Heat a large skillet over medium heat and add oil, garlic, anchovies, and crushed pepper. Saute mixture until anchovies melt into oil and completely dissolve and garlic is tender, about 3 minutes: your kitchen never smelled so good! Add olives, capers, tomatoes, black pepper, and parsley. Bring sauce to a bubble, reduce heat, and simmer 8 to 10 minutes.
Toss sauce with cooked pasta. Pass bread and cheese at the table. Serve w/ salad of baby greens, simple dressed.

Fish Rolls Primavera -
1 c carrots, shredded
1 c zucchini, shredded
2 TBS onion, finely chopped
1/2 c breadcrumbs
1/8 tsp thyme leaves
1/4 c butter, melted
4 fish fillets
Preheat to 375. Combine veggies, breadcrumbs, and thyme. Combine butter and lemon. Add 1/4 c to veg mixture. In shallow baking dish, place equal amount veggie mixture on each fillet; roll up. Pour remaining butter over fillets. Bake 15 min. Can serve with rice and veggies.

French Onion Soup -
2 large onions,diced large
4 cans beef broth
muenster cheese for garnish
croutons for garnish
Chop onion and saute until still crunchy in butter. Add to bouillion.
Boil and simmer @15 min. Sprinkle with cheese and croutons before serving

Rosemary Lime Chicken-
4 boneless skinless chicken breast halves
2 TBS canola oil
1/2 c chicken broth
1/4 c lime juice
2 tsp rosemary, crushed
s&p
Flatten chicken and brown in oil. Add remaining ingredients and cook, uncovered 5-7 min or until juices run clear. Serve with rice and veggies.

Whole Wheat Chicken Fajitas.
1. Whole wheat tortillas with at least 3g of Fiber (considered hig fiber)
2. Sliced bell peppers: I like to use green, yellow, and red because its pretty, but when I'm in a rush I just use one.
3. Dice part of an onion or cut into strips
4. Chicken breast cut into strips (one breast per person eating)
Grill chicken in a frying pan (use non-stick spray if desired). Drain grease, add bell peppers & onions.
Put chicken, onion, bell peppers on a tortilla and enjoy.
Optional:
Add low sodium spices or low-fat/low-sodium cheese to your liking. Natural/fresh salsa or guacamole is a good addition; depending on how much time or money you have.
** notice you only have to clean one pan, two knives, and two cutting boards **

any fish, wrapped in tin foil, surrounded by veggies, with lemon peels on it, and a 1/2 cup of mountain due poured on. Close foil and cook in oven 350 degrees for 10 minutes or less! MMMMM MMMMM MMMMM!

well first you need to realize what you like. then narrow it down whats healthy and cooks fast and what doent . if it dont go together its ok just be happy you fixed somthing. and if your not happy with that its ok to fix 1 or 2 things that r not healthy that doent ruin the meal . hope i helped!!!
