ok im tryin 2 make pumpkin bars
but
it calls 4 1C of salad oil
will it come out weird if i use veg. oil or no oil
at all????

or i can go 2 a neighbor
but................who? =( lol

You need to sue some oil, yes... veg oil *IS* salad oil...maybe half a cup oil (or melted butter/marg) and 1/2 cup applesauce. OR, try either of these recipes... no oil required!

Amish Pumpkin Pie Squares

Crust
1 box of yellow cake mix (remove 1 cup for topping)
½ cup melted butter
1 Egg

Fililng
3 cups canned pumpkin (1 lb 14oz. can)
2 eggs
2/3 cup milk

Topping
1 cup reserved cake mix
1/4 cup sugar
1/4 cup butter
1 tsp cinnamon

Grease the bottom of a 9 x 13 pan. Preheat oven to 350ºF.

CRUST: Combione remaining cake mix, butter, 1 egg. Press into pan.
FILLING: Combine pumpkin, 2 eggs, and milk and blend till smooth.
Pour over crust.
TOPPING: Combine reserved cake mix and remaining ingredients; Sprinkle over filling layer.

Bake for 45-50 minutes till knife comes out clean.

Pumpkin Cheesecake Bars

1 cup all purpose flour
1/3 cup brown sugar
5 Tbsp. butter softened
½ cup finely chopped walnuts or pecans
8 oz. cream cheese, softened
3/4 cup sugar
½ cup solid packed Pumpkin
2 eggs, slightly beaten
1½ tsp cinnamon
1 tsp vanilla

Preheat oven 350ºF. Combine flour, brown sugar in med bowl. Cut in butter. Stir in nuts. Reserve 3/4 cup of this for topping. Press remaining into the bottom of an 8x8 pan (or double and put in a 11x15 pan). Bake 15 min., cool slightly. Combine remaining ingredients in large mixing bowl. Blend until smooth. Pour over crust and sprinkle on reserved topping. Bake an additional 30-35 minutes...until knife comes out clean. Cool before cutting into bars. Single batch makes 32 (1”x2") bar cookies.

In sweet baked goods, substitute applesauce or pureed fruit for oils, butter or margarine. As a general rule, you can use a cup of applesauce or fruit for every cup of oil or butter.

Or you can try melting butter and use that instead! Better than not putting anything in:) Most times you should be able to substitute.
