This is Rachel Ray's crab salad recipe-

6 oz crab meat, broken up
1 tsp orange zest
1/4 red bell pepper, sliced
3 radishes, grated
1 shallot, chopped
1/4 c leafy part of celery, chopped
3 TBS heavy cream
1/4 c mayo
s&p

Stir all together and serve on endive leaf or crackers (or of course sandwiches)

1 package imitation crabmeat, shredded
1 red bell pepper, diced
2 stalks celery, diced
1/4 cup mayonnaise
1/4 cup zesty Italian salad dressing
1/8 teaspoon fresh cracked pepper
salt
4 leaves iceberg lettuce
8 slices of toasted bread

Mix first seven ingredients.
Lay one lettuce leaf each on four pieces of toast.
Scoop filling on top of lettuce and place other piece of toast on top.
Slice sandwich in the middle and serve.

I'm making some for appetizers too what I'm going to do to make it snappy is buy some already made at the grocery store and spread it on regular crustless bread or hamburger buns with lettuce and slice them into little squares.

Also add just a little squeeze of lemon to the crab. The flavor is incredible.
