Anyone have any great cookie recipes that are easy and quick. I need this for a Christmas present for my boss. Thanks!

I just made thumbprint cookies, first time and wow, they turned out great. I doubled this recipes and got about 3 dozen:

1 cup butter
1/2 cup packed brown sugar
2 eggs
1 tsp vanilla extract
1/4 teaspoon salt
2 cups flour
Cream butter with sugar, beat in egg YOLKS and vanilla. Stir in flour and salt.
Shape the dough into small balls and roll in the slightly beaten egg white, then roll in chopped nuts. Press thumb in center of cookies to make an indentation
Bake at 350 for 7 minutes or until lightly borwn. Cool and fill with your favorite frosting or jam.

Notes on mine: They actually took about 12 minutes to cook in my oven. I rotated the pans and switched the up down position or the racks 1/2 way through cooking and I used a timer.
I line my pans ALWAYS with parchment paper and have 2 in the oven and use the two cool ones our of the oven to prepare the next batch. Never put cookie dough on hot or even warm cookie pans! I used my big 350 watt stand mixer.

I filled 1/2 of mine with raspberry jam and the other half with a homemade frosting I use on sugar cookies: 2 cups of powdered sugar, 1/4 stick of butter, 2 1/2 tablespoons of milk, 1 tsp of vanilla, use a hand mixer to mix and I put mine in fridge for a while to chill. When ready to put into the thumbprints, I divided it into 3's. I dyed two of the bowls of frosting and left one white and put colored sugar on top of that.

I box yellow cake mix.
2 eggs
1/4 cup canola oil
2 cup trail mix (your fav kind)

Mix up mix, eggs and oil to a dough. Add the trail mix and stir.

On a large pizza pan (I use the disposable ones in the section where you get aluminum lasagna pans) spread out the dough just less than a half inch deep and to with in an inch of the edges of the pan.

Bake for 20 - 25 minutes at 350 degrees (When it looks dry on top it's ready to test with a tooth pick in the middle.) It's a good idea to have foil under the pizza pan in case it runs over the edge a little (Thats why you want to leave some room around the edges - it will spread.)

This turns into a giant beautiful cookie. Depending on what trail mix you use it can be very festive. My fav is the Walmart Indulgence - It has white chips, chocolate chips, peanut butter chips, dried cranberries (colorful!), golden raisens, cashews, almonds and peanuts.

I have given this as a gift to my friends and just be prepared for them to ask for more!!

Hazelnut Chocolate Chip Cookies

1/2 cup old-fashioned oats
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, room temperature
1 cup (packed) light brown sugar
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
4 ounces English toffee candy (recommended: Heath or Skor bar), finely chopped
1 cup hazelnuts, toasted, husked, and chopped
1 (12-ounce) bag semisweet chocolate chips

Preheat the oven to 325 degrees F.
Line 2 heavy large baking sheets with parchment paper. Finely chop the oats in a food processor. Transfer the oats to a medium bowl. Mix in the flour, baking powder, baking soda, and salt. Set aside.

Using an electric mixer, beat the butter and sugars in a large bowl until fluffy. Beat in the eggs and vanilla. Add the flour mixture and stir just until blended. Stir in the toffee, hazelnuts, and chocolate chips.

For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1-inch apart (do not flatten dough). Bake until the cookies are golden (cookies will flatten slightly), about 15 minutes. Cool the cookies on the baking sheets for 5 minutes. Transfer to a cooling rack and cool completely. (The cookies can be prepared 1 day ahead. Store airtight at room temperature.)

I made these as one of the types of cookies for christmas gifts last year...I lined these pretty buckets (you can buy them at any craft store) with tissue paper, and I stuffed them with cookies. Everyone loved them! Here is the recipe for the best and easiest cookie recipe:

Coconut Macaroons

1 14oz bag of flaked coconut
2/3 cup sugar
1/4 tsp salt
3 tbsp flour
1 tsp almond extract
4 egg whites
1 bag of semi-sweet chocolate chips

Preheat oven to 325. Combine first 4 ingredients in a mixing bowl. Add almond extract and egg whites and mix until completely combined. Scoop tablespoon amounts on a greased cookie sheet and bake for 20 minutes or until edges are golden brown. Let cool on wax paper. Melt chocolate chips in microwave and dip half of each cookie in chocolate. Place back on wax paper and let chocolate harden completely. (You can speed it up by putting them in the freezer for a few.

I personally love mint chocolate chip cookies. If you want a truly fast and easy recipe, start by getting a good chocolate chip cookie mix from the store and following the directions. If not, google a recipe so you can make it from scratch. Either way, you end up with chocolate chip cookie dough. Add one teaspoon of mint extract and about three drops of green food coloring. Cook according to directions.

You can find harder ways to do it, but this is nice and simple, quick, and yummy. ^_^

Peppermint Cookies -

3/4 cup granulated sugar
2/3 cup vegetable oil
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon peppermint extract
2 eggs
2 cups Gold Medal® all-purpose flour
About 1/4 cup granulated sugar
About 1/4 cup red colored sugar


1 . Heat oven to 400ºF. In large bowl, mix 3/4 cup sugar, the oil, baking powder, vanilla, salt, peppermint extract and eggs with spoon. Stir in flour.
2 . Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Press bottom of glass onto dough to grease, then dip into 1/4 cup granulated sugar; press on balls until 1/4 inch thick. Spoon red sugar on cookies, using very small spoon, in spiral design to look like peppermint candies. Or place red sugar in resealable food-storage plastic bag; snip off tiny corner. Squeeze red sugar from bag onto cookies.
3 . Bake cookies 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.

Chocolate Chip Heart Cookies (Cookie Mix):

No rolling pin is needed! A cookie cutter and balls of cookie dough are the secret to lovely cookies.

Prep Time:1 hr
Start to Finish:1 hr
Makes:22 cookies

1pouch Betty Crocker® chocolate chip cookie mix
1/4cup Gold Medal® all-purpose flour
1/2cup butter or margarine, softened
1egg
3-inch open heart-shaped cookie cutter

1.Heat oven to 375°F. In medium bowl, stir cookie mix, flour, butter and egg until well blended. Roll into 1 1/4-inch balls.
2.Spray cookie cutter with cooking spray; place on ungreased cookie sheet. Press dough ball evenly into cutter. Remove cutter; reshape dough if necessary. Continue making heart-shaped cookies, placing 2 inches apart on cookie sheet. Spray cookie cutter as needed with cooking spray.
3.Bake 6 to 8 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheet.
High Altitude (3500-6500 ft): Increase flour to 1/3 cup.

Easy Peanut butter Cookies

One cup of PB, One cup of sugar, and one egg. Bake on 350 until brown/crispy. This makes a nice flour-less cookie, and it's easy to make.

3/4 cups instant oats
1 package of chocolate cake mix

Follow cake mix instructions and add whatever ingredients it says eggs/water/oil.
Make into balls cook at 350c for 10-13 until lightly brown, remove from pan and cool. They are great.

You can add chocolate chips or nuts if you want.

allrecipes.com and you can find any recipe you like and they rate the ease or difficulty.. great site! if not there's always nestle or pillsbury sites too.... crisco recipes in the box of stick shortning are classic and no fail.... doctor them with candied fruit instead of raisins or mini m&m's instead of chocolate chips....God bless!
