My father-in-law will be coming to my house Christmas Eve for gift exchange and I am serving hot ham sandwiches at my husband's request. What side dishes would be best served with this? It's fairly casual, but I still want to make something with holiday flair.

I'm going to make this with my ham on Christmas:

Potato Bacon Kugel

9 potatoes (use russet)
4 strips of bacon (try 1/2 pound)
1/2 cup chopped onion (use 1 medium onion)
1 cup milk
1 egg
2T sour cream
salt
pepper

1) Preheat oven to 350
2) Grate potatoes and drain in a colander - try to remove as much moisture as possible
3) Cook bacon in a skillet. Drain (save grease) and crumble
4) Cook onion in same skillet until soft
5) Add potatoes and cook until heated through
6) Heat milk in a small saucepan. Once hot, add egg to milk (be sure to temper that egg!)
7) Stir all together and put in a greased baking dish. Cook uncovered for ~60 minutes - until the top is lightly brown and crispy.

I like to serve hot ham with rosmary potatoes (Slice pot's layered in pan, with a few sprigs of rosemary laid on top, 2-3 Tbsp butter cut up over it and sprinkle with S and P. cover with foil and pop into the oven for about fifteen or twenty mins right along with the ham while its cooking. Take the foil off the last five mins to brown the pot's.)

Raw veggies would go well as something crunchy to have with the sandwiches (Have a dip for them too)

Also Pickles are a big fav at my house, with ham or anything! Have a couple of different kind - Maybe a relish tray with olives pickles and gardenia mix (Is that how it's spelled?) and hot pickled okra, and dill pickled baby corn.

Have some nice deli cheese, sliced to go with ham and maybe some different types of bread like Rye, pumpernickle or something hearty, in additional to more tradional white breads.

You don't have to. my family has lasagna. My friend has Turkey... Again. Some people (sadly) have Mac and cheese. You can have Goose, or duck like other family's. Christmas dinner is usually suppose to be the last best dinner of the year. So make what you like. Or stick to Ham if you cant find or cook any thing else.

Finally, here it is!!

1# ground beef, browned and drained
medium onion chopped
1/2 # bacon cut up

1 can kidney beans
1 can butter beans
1 can pork and beans

1 c brown sugar
1 c catsup
1 T dry mustard
1 T liquid smoke

Mix together and bake at 350 for one hour

Definitely something cheesy, like pasta or potatoes, and also somne roasted pineapple rings (either on the sanwich along with a pineapple glaze, or just on the side). And something with mustard in it, like potato salad.

Your husband has a different idea - it sounds yummy. I was just thinking how "traditional" ham is with Redeye Gravy, if you were to be serving the sandwiches open-faced. You can tweak this recipe to take advantage of the gravy for now. Otherwise, you could fix this with your leftovers...


"Traditional Fried Ham and Real Redeye Gravy" - Serves 2

2 slices country ham (preferably Smithfield); each 1/4" thick, skin trimmed off
1/2 cup water
1/2 cup strong brewed coffee

Heat a nonstick skillet over medium-high heat. Add ham slices; fry until browned on both sides and heated through, about 3 minutes per side. Remove ham to plate; keep warm. Pour off all but 2 tbsp. of the drippings.
Place skillet with drippings over high heat; stir in water and coffee. Bring to a boil, scraping up the browned bits from the bottom of the skillet, about 2 minutes. Pour gravy over ham.

"Golden Scalloped Potatoes" - 8 servings

1/4 cup butter
3 tbsp. flour
1 tsp. salt
Dash pepper
3 cups milk
5 large Yukon gold potatoes; peeled and thinly sliced

In large saucepan over medium heat, melt butter. Stir in flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened and bubbly.
Place potatoes in a greased 9" square baking dish; add sauce and stir gently to coat. Cover and bake at 325* - 30 minutes. Uncover; bake 30-40 minutes longer or until potatoes are tender.


"Glazed Carrot Coins" - 4 servings

2 tbsp. butter
2 tbsp. brown sugar
2 tbsp. orange juice
1/4 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. ground cinnamon
6 medium carrots; cut into 1/2" slices

In small saucepan, melt butter over medium heat. Stir in brown sugar, orange juice, salt, ginger and cinnamon. Add carrots; cover and cook 20-25 minutes or until tender, stirring occasionally.


"Apple Crisp" - 8 servings

5 medium tart apples; peeled and sliced
1 1/4 cups sugar; divided
1 3/4 tsp. ground cinnamon; divided
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 cup cold butter
1 cup water

In bowl, combine apples, 1/4 cup of the sugar and 1 tsp. of the cinnamon. Transfer to a greased 8" square baking dish. In a small bowl, combine flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top.
Slowly pour water over top; sprinkle with remaining cinnamon. Bake, uncovered, at 400* for 40-45 minutes or until apples are tender. Serve warm, with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.

It may sound silly but tomato soup in holiday mugs. I did that one year and everyone was refreshingly enthused. :) Served off the stove like eggnog. Filling and quick with little clean up. and everyone loves tomato soup.

Scalloped potatoes are always a good one. I love them! We have them every year with Dinner's and they go good with ham too!!

cheesy au gratin potatoes you can find them in the store. very easy to make and goes great with ham.
