I wouldn't do a heavy hot veggie. I would go with a caesar salad or some greens with a salsa ranch style dressing and a few good croutons.

Creamed corn. Cheese stuffed tomatoes. And this is not a veggie, but yellow or Mexican rice.

Beans are nasty and don't belong anywhere near a plate, much less next to something as awesome as enchiladas.

But usually I like lettuce and a tomato slice with mine. Its even better with sour cream. Red rice is good (basically white rice flavored with tomato paste and some various spices). Maybe some green or red peppers (or for more vibrant color maybe the yellow or orange ones).
