it is my first time boiling italian sausage, and my friend said to boil it till the middle is no longer pink. i have been boiling it for atleast 2 1/2 hours and the center is still pink and it wont change. is it suppose to be pink or am i doing something wrong.

Okay, forget the other answers, this is the best way. Put about 1/4 cup of water (broth, wine, or beer work well also) into a skillet with a tight fitting lid. Add your sausage making sure it is touching the skillet surface as much as possible. Cover with the lid, turn heat onto medium, medium/high & steam for about 20 minutes. To be certain it's done, you can insert an instant-read meat thermometer. 160 degrees is a safe internal tempertature. When the sausage is just under-done, (+/- 155 degrees) remove the lid, turn the heat to high & cook out the liquid. Continue to cook until sausage is brown. Perfect!! You can even use this method with frozen sausage. You'll just need to steam it longer.

I would never boil my Italian sausage. I would pan brown it in a little bit of water turning it frequently. I am sure you have way overcooked your sausage by now. I would start over.

What kind of sausage is it?If its the HOT Italian, then it may look slightlt reddish inside, even when cooked. If you were boiling for 2 hours, I would say its cooked, I also fry my sausages in a little oil onl ow flame,in a frying pan,just keep turning them untill completly brown, not black, on the outside, and to be sure, take one out,and cut in half.

Why would you boil italian sausage? No matter what recipie you use it in, you can fry it. If you are putting sausage in a recipie you can cut it up and fry it, or if you are adding to a red sauce, you can still fry it beforehand and then add it to your sauce and let it cook the rest of the way.

You have way overcooked it and the pink will not go away. Boiling should be at best for an hour. Time to eat it and find out.

Well i don't usually biol it instead i would fry it in a pan... but i would say in till its not raw.
