Oops, I forgot the recipe:

1 Box of Jello
1 cup of boiling water
1 cup of cool water

Make a jello, any flavor.
In a pudding dish put a layer of old stale but NOT mouldy, sponge cake or lady fingers or fruit cocktail.
You can use any size or shape bowl or dish, even a loaf pan but looks good in a clear pyrex dish.
Pour the cooled jello over the sponge or fruit. Leave to set.
When set top with any flavor pre made pudding, vanilla is ideal.
Decorate with whatever you like. I have grated chocolate or cookies on top for a crunchy effect.
The hardest thing you have to do for this is boil water.
always a hit at potluck suppers or family gatherings.

Berry Berry Gazpacho

A colorful mix of berries and juice in a refreshing summer soup.Ingredients:
• 1 pint berries, washed and stemmed (strawberries, raspberries, blueberries, boysenberries, blackberries, or gooseberries, and/or any combination of berries to equal 1 pint)
• 1/4 cup water
• 1/4 cup dry white wine
• 1/2 cup sugar
• 2 tsp fresh lemon juice
• 1 Tbsp cornstarch blended with 2 Tbsp cold water
• Optional Toppings: (for your guests if they prefer)
• whipped heavy cream, sorbet, sour cream, buttermilk or lemon yogurt
Method:
Simmer berries in water in a covered saucepan 10 minutes until mushy. Put berries through a food mill or blend at low speed. Press through a sieve. Return puree to pan, add remaining ingredients and heat to a boil, stirring constantly. Taste for sugar and add, if needed. Serve hot or cold, toppings optional.
Notes:
A wonderful refresher especially for people who live in parts of the country where fresh fruit is readily available most of the year. I live in Maine, so, this is only a summer treat in New England, due to the short growing season.

Baked Apples

Ingredients:
2 apples, cored

2 tbsp. walnuts, chopped fine

2 tbsp. dried apricots, diced fine

2 tbsp. raisins
1/2 cup Orange juice , or apple juice

1/2 tsp. Cinnamon
pinch of allspice

pinch of Nutmeg

1 tbsp. brown sugar

Preheat oven to 350 degrees. In medium size bowl combine walnuts, apricots, raisins, sugar and spice Mix until all ingredients are covered with spice and sugar. Spray the bottom of an 8x8 baking pan with non-stick pan. Place each cored apple in the baking pan and stuff each apple with as much of the filing as possible. Any remaining filling you place in the baking pan with the apples. Pour the juice over the top of the apple. While baking , occasionally baste apple with the juice and remaining filling. Bake 1 hr. and 20 min. , or until soft, covered with aluminum. For a firmer apple you could bake for less time. Place a baking sheet underneath pan covered with aluminum to drop any spillage. Serve as is, or with a dollop of lite whipped topping. You could top with this delicious low fat cool whip....that would make it delicious!

Here's one:
Grape Salad

3 or 4 pounds of seedless grapes (red and green)

14 oz. Marshmallow fluff

16 oz. Cream cheese

1 tbs. Sour cream

1 cup of crushed toasted pecans (or nut of choice)

Reserve some of the pecans to sprinkle on top

Let cream cheese soften a little before trying to mix.

Mix cream cheese, sour cream and marshmallow fluff in mixing bowl.

Fold in grapes

Fold in pecans

Serve in compote bowl. Sprinkle with pecans and garnish with a small bunch of grapes laid on top.

You could mix 1 can pure pumpkin with eggs and honey and cinnamon and bake into a custard. If you want a bit more creamy use soy milk.

Sure- try www.allrecipes.com. You can search by ingredients you want or don't want and what kind of food you want. You'd probally have to go with a fruit salad or some kind of fruit dish.

There are lots of great recipes on allrecipes.com that don't have those ingredients in them. Try there and search for ingredients you want OR those you dont.
