What kind of chocolate should I buy to use with a chocolate fondue?

You want a melting chocolate, so it will not separate when hot. Party supply stores usually sell it.

CHOCOLATE GRAND MARNIER FONDUE:
1/2 lb. bittersweet chocolate, chopped
1/3 cup heavy cream
2 tablespoons butter
1/2 cup confectioners' sugar
2 tablespoons Grand Marnier
In a large double boiler, boil 2 cups of water over high heat. Turn heat down to low and simmer water.
Place chocolate, cream and butter in the upper part of the double boiler.
Stir the chocolate mixture until smooth. Whisk the confectioners' sugar into the mixture, then add the Grand Marnier.
Keep the water in the double boiler at a simmer and dip fresh fruit into the chocolate mixture.

Dark Chocolate Raspberry Fondue:

Dip into the dark, rich pleasure of chocolate fondue! Four ingredients are all it takes to make this indulgent treat.

Prep Time:15 min
Start to Finish:20 min
Makes:16 servings (2 tablespoons each)

2/3cup whipping cream
1/3cup seedless raspberry preserves
1tablespoon honey
1bag (12 oz) semisweet chocolate chunks
Assorted dippers (fresh fruit pieces, pretzels, shortbread cookies, pound cake cubes or angel food cake cubes), if desired

1.In fondue pot or 2-quart saucepan, mix whipping cream, raspberry preserves and honey. Heat over warm/simmer setting or medium-low heat, stirring occasionally, just until bubbles rise to surface (do not boil).
2.Add chocolate; stir with wire whisk until melted. Keep warm over warm/simmer setting. (If using saucepan, pour into fondue pot and keep warm over warm/simmer setting.) Serve with dippers.

i dont know the brand, but there are these little waffer-like chips that are made for dipping. they work GREAT!

its a round white box with a tubberware type lid, probably about 5-6 inches in diameter. i know they are usually found near the fresh fruits as well as in the backing isle in the Giant Food's store we shop at.

The Original Chocolate Fondue

Makes 5 (1/4-cup) servings
Start to Finish: 15 minutes

Ingredients
1 11-1/2-ounce package milk chocolate pieces
1/4 cup milk
1 tablespoon crunchy peanut butter
Milk
Assorted fruits (such as star fruit or carambola slices, orange sections, whole strawberries, pear slices, banana slices, apple slices)
Angel-food cake or pound cake cubes
Marshmallows

Directions
1. In the top of a double boiler placed over gently simmering water, or in heavy small saucepan, combine the chocolate pieces and 1/4 cup milk. Heat, stirring constantly, over low heat until chocolate is melted and smooth. Stir in the peanut butter. Cook and stir till heated through. Stir in additional milk, 1 tablespoon at a time, until desired consistency.
2. Pour mixture into a fondue pot; place over fondue burner set on low. With fondue forks or long skewers, dip fruit dippers, cake cubes and/or marshmallows into chocolate mixture. (Will hold up to 1 hour on low. If mixture gets too thick, add milk 1 tablespoon at a time.) Makes 5 (1/4-cup) servings.
Chocolate S¿Mores Fondue: Prepare as above except omit peanut butter. Pour mixture into a fondue pot; place over fondue burner set on low. Add 1 tablespoon marshmallow creme to the center. Do not stir. Slowly pour 1 tablespoon rum into fondue pot. Ignite liquor by touching lighted match to edge of pot. (Cooking or flambeing with an open flame should be done with great care and adult supervision. It will take about 1-1/2 minutes for the flame to burn down.) Carefully swirl the mixture after flame has subsided. Sprinkle 1 tablespoon graham cracker crumbs over the top. Do not stir. With fondue forks or long skewers, dip fruit dippers, cake cubes and/or marshmallows into mixture.
Flaming Turtle Fondue: Prepare as above except omit peanut butter. Stir in 2 tablespoons caramel ice cream topping. Cook and stir until heated through. Pour mixture into a fondue pot; place over fondue burner set on low. Slowly pour 1 tablespoon rum into fondue pot. Ignite liquor by touching lighted match to edge of pot. (Cooking or flambeing with an open flame should be done with great care and adult supervision. This will take about 1-1/2 minutes) After the flame burns down, sprinkle 1 tablespoon finely chopped pecans over the top. Do not stir. With fondue forks or long skewers, dip fruit dippers, cake cubes and/or marshmallows into mixture.
