Of course it depends upon your supplier. Many producers do exactly as you describe, others will take the white meat, and press it using a gelatin binder to make a block that can then be sliced (look for the words "chunked & formed"). These are usually those square plastic packages that hang in neat rows with the bologna.

Don't panic in either case. After all, it's in their best interest to keep you happy and healthy, and the laws about using...ah..."parts" that you wouldn't normally touch, much less eat are VERY strict.

its processed and formed to be honest after the parts are used they cut and form the meat from pressure and grinding then cooking

No, it's not just turkey. They add salt, some additives, and fat.
