I usually make my banana bread with olive oil and it tastes delicious. If you think the olive taste is too strong, maybe mix it with another oil.
For a low fat version you can use milk instead of oil. It won't be quite the same and you maybe replace 1/2 to 3/4 of the oil with skim milk.

Most olive oils have a rather distinctive flavor, I don't use olive oil for sweet breads. My preference is nut oils, walnut, almond, etc. for sweet baking.
If you're in a pinch and that's all you have and no time to run to the store you can try it, but I think it will make your sweet bread taste a little odd.

You should probably use corn oil, vegetable oil or canola oil. Olive oil has a pretty distinctive taste and may not go well with the sweetness of banana bread.

You shouldn't use olive oil in baking. I have tried it and the end product is very different. If your using a boxed mix it is formulated for a light oil such as corn, safflower, or canola. Olive oil has a different texture when it heats. As well as the flavor overpowers the sweetness of most mixes.

olive oil is more expensive than regular cooking oil and has a different taste. Extra virgin olive oil should not be cooked as it changes it health benefits with heat. So why not use regular cooking oil that has no taste unless that is all the oil you have

Olive oil has a distinctive taste that could affect the taste of the bread. I would use canola oil which has no taste of its own.

No... though olive oil is an oil.. it does have a different taste than all other oils.. not necessarily positive for a sweet pastry. def go with a vegetable oil .. or canola oil works too.

You can...if your olive oil is extra virgin...it will change the flavor of the bread a little...and that is simply a matter of taste...some may light thte little extra body...others may not.
