Neither one.
If I recognized the monk as a Hindu, I would say "Namaste", while making a slight bow, with my hands pressed together in front of my chest.
Just like I'd greet a Catholic priest with "Good Morning (or afternoon, or evening) Father".
I don't know the proper greeting for a Buddhist monk, but I'd like to know it.

I sometimes see Buddhist monks chanting in public and asking for alms, because I live in Japan.
I don't run like hell or kick them in the ---. I just go on my merry way, and let them be.

I would ask to shake his hand if it would not offend the particulars of his sect, and offer to buy him a meal in exchange for his company and insight on whatever thoughts I was having that day. I would welcome the different viewpoint such a person could offer.

I have met several Buddhist monks here and when I spent time in Thailand. I smiled, steepled my fingers and said "Sawadee" while over there. And when I was in their temples, I took my shoes off and knelt so I was below Buddha. Why would you disresepect them?

I met the Dali Lama once (in Bloomington, IN) and I went up, greeted him properly and he invited me to dine with him (his treat) we sat and talked for about two hours. Just because I am a follower of Jesus the Christ doesn't mean that I disrespect others who are holy. Yes, the Dali Lama is holy. He believes in Jesus. Why don't you.
