If you have insufficient gastic acidity, drinking vinegar may help digestion a bit and keep down bacteria such as Helicobacter (ulcer-producing bacteria) although betaine HCl is another substance more commonly recommended for increasing acidity during food consumption.
Otherwise, there isn't any particular health benefit of drinking vinegar. Excessive vinegar consumption can lead to systemic acidosis which can seriously impair health, so moderation is advisable.

I also have Crohn's disease and I am a pharmacist. But I was able to tame my Crohns disease symptoms with alternative methods like acupucture and natural supplements. I take vitamins, supplements, natural but very well tested immune system modulators. There are many things that you would need to do to get MUCH better but its absolutely possible to get better if you really want to. Change your diet, get enough sleep, do light exercise, etc.
