The back of the ocean spray cranberries I had included a nice cranberry nut bread recipe. I tried it and it was good as well as a great way to get rid of the leftover cranberries from thanksgiving.

Add some cranberries to a homemade peach pie....yummy!!!! The sweet from the peaches and the tart from the cranberries...what a nice combo on the taste buds.

Not hard at all use 3/4 strawberries and 1/4 cranberries and sugar. The amount of pectin in both fruits means it will set all on its own.

Sweet Onion Cheesecake with Cranberries and Sage





Servings: 8
Level of difficulty: Intermediate
Preparation Time: 10 minutes, plus 10 minutes cooling if serving warm
Cooking Time: 1 hour
Ingredients
1kg Ricotta cheese
3 tbsp Olive oil, plus more for greasing tin and drizzling
350g Onions, chopped
4 garlic cloves, chopped
4 eggs, beaten
6 tbsp freshly grated Parmesan cheese
salt and fresh ground black pepper
150g fresh or thawed frozen cranberries
50g cracker crumbs (cream crackers or saltines), crushed finely
extra sage leaves, for decorating

Method
1. Preheat the oven to 190°C/gas 5.

2. Place the ricotta in a sieve to drain.

3. Heat the olive oil in a large, heavy-based frying pan. Add the onion and fry very gently over a low heat until translucent and softened, stirring now and then.

4. Add the garlic and sage and fry gently, stirring now and then, until fragrant. Set the onion mixture aside to cool.

5. Beat together the drained ricotta, eggs and Parmesan. Season with salt and freshly ground pepper.

6. Mix together the ricotta mixture, fried onion mixture and cranberries.

7. Brush a 22cm spring form cake tin with olive oil. Scatter the cracker crumbs evenly over the bottom and sides. Pour in the ricotta mixture. Decorate the top with whole sage leaves and drizzle with olive oil.

8. Bake the ricotta cheesecake for 45 minutes until firm and golden.

9. Allow to rest for 10 minutes before serving warm or let it cool completely and then serve.

I like to take cranberries and mix them with apples.

1 package of cranberries
1 cup of sugar
2 Fuji apples (sliced)
2 Jonagold apples (sliced)
tapioca

Combine cranberries and sugar into saucepan. Cook until the berries begin to pop. Add sliced apples and cook until cranberries and apples are almost tender. Add tapioca to thicken. Amount depends on how thick you want it. I would start with a tablespoon and go on from there.
